  • 2 tbsp This is an affiliate link.olive oil
  • 4 small zucchini
  • 1-2 grilled red peppers, from a jar
  • 5-6 cherry tomatoes, red and yellow
  • 80g/1/2 cup Italian marinated mushrooms , Italian antipasti
  • 1 clove garlic, crushed
  • 5-6 leaves fresh basil, or 1 tsp dried
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste

Instructions

  • Prepare the Zucchini: Slice the zucchini 1/4 inch thick. Lightly sprinkle the rounds with salt, then pan-fry them in olive oil over medium heat for 2-3 minutes on each side until they are beautifully golden and tender-crisp. Alternatively, you can broil them in the oven for 2-3 minutes per side for a similar result. If you prefer to use raw zucchini for a lighter, crispier salad, slice them as thinly as possible lengthwise using a mandoline or a very sharp knife.
  • Infuse with Aromatics: Once cooked (or if using raw), remove the zucchini from the pan and transfer them immediately to a large salad bowl. Directly squeeze the crushed garlic clove over the warm zucchini.
