  • 450g / 1 lbs Italian pork sausages, casings removed

  • 2 cloves garlic, minced
  • 250g / 8 oz cooked green lentils
  • 2 tbsp tomato paste
  • 70ml / 1/4 cup chicken stock, or water
  • 5-6 small and medium red, yellow and green bell peppers
  • Salt to taste
  • 1/2 cup grated mozzarella cheese

For the Sauce

  • 250ml / 1 cup crushed tomatoes
  • 125ml / 1/2 cup chicken stock, or water
  • 4-5 sliced fresh basil leaves, or 1/2 tsp dried basil
  • 1 tsp garlic powder
  • 1/2 tsp salt

  1. Heat the olive oil in a large frying pan over medium-high heat. Add the Italian sausages (casings removed) to the pan, breaking them up into small, even pieces with a spatula as they cook.
