There’s nothing quite like a period of relaxation and travel to ignite a fresh burst of creativity in the kitchen. After taking August off to explore new places and cherish moments with my family, September always brings with it an irresistible urge to dive back into culinary experimentation. The reset button of rest and rejuvenation truly does wonders for the mind, sparking new ideas and a renewed passion for flavors. My recent adventures in Tuscany, a region synonymous with breathtaking landscapes and unparalleled gastronomic traditions, served as the ultimate inspiration.

Eating our way through Tuscany was an experience that deeply resonated with my culinary soul. The sheer richness and incredible diversity of Italian cuisine never cease to astound me. While pasta serves as a unifying thread across the country, each region boasts a unique tapestry of dishes and ingredients, reflecting local traditions and produce. It’s a culinary journey without end, and one I never tire of embarking upon. That’s precisely why a significant portion of this website is dedicated to the wonders of Italian food. Italy holds a special place in my heart; it was the initial reason for our move from Canada to Europe, eventually leading us to the UK. Life’s unexpected twists and turns are often a mystery, but with age, I’ve learned to embrace and appreciate them, especially when they lead to such delicious inspirations.

The Allure of White Chicken Lasagna with Winter Greens
While this particular recipe might not be one I directly encountered during my Italian travels, the harmonious blend of its flavors is unequivocally Italian at heart. My family’s profound love for lasagna has spurred me to experiment extensively over the years, venturing far beyond the traditional. From the robust lasagna alla bolognese to delicate seafood lasagna and earthy eggplant lasagna, I’ve explored a myriad of renditions. I even crafted a lentil bolognese lasagna for my vegetarian platform, proving the versatility of this beloved dish. Each version, a testament to comfort food personified, has its unique charm.
For this iteration, I sought to create a lighter yet equally satisfying profile, opting for savory chicken sausage meat paired with a medley of fresh winter greens. My choice for this recipe was spinach and tenderstem broccoli (also known as broccolini), which offer a beautiful balance of earthiness and a slight crunch. However, if you have access to them, cavolo nero (black kale) and rapini (broccoli rabe) would make fantastic substitutions, introducing a wonderfully subtle bitter note that masterfully cuts through the richness of the dish, a technique frequently employed in Italian cooking. It’s this thoughtful contrast, alongside the smooth, creamy béchamel sauce and melting mozzarella, that intricately weaves all these delightful flavors into a cohesive and unforgettable lasagna.
This white chicken lasagna truly stands out. It’s not just another pasta dish; it’s a celebration of textures and tastes. The lean chicken offers a lighter protein base compared to traditional beef, while the vibrant greens infuse the lasagna with freshness and essential nutrients, making each bite feel indulgent yet balanced. The béchamel, a cornerstone of white lasagna, wraps everything in a comforting embrace, providing that signature creamy mouthfeel that distinguishes this dish from its red sauce cousins. Crafting the Perfect White Chicken Lasagna: Essential Tips and Notes
Creating this magnificent white chicken lasagna is a rewarding process, and a few key insights can ensure your success:
- **Layering Excellence:** This recipe features three distinct and flavorful layers: the creamy chicken filling, the robust winter greens, and, of course, the pasta sheets. Each layer contributes to the overall complexity and satisfaction of the dish.
- **Prepare Ahead for Ease:** To streamline your cooking day, both the winter greens and chicken fillings, along with the béchamel sauce, can be prepared a day in advance. Simply cook them, allow them to cool, and store them in airtight containers in the refrigerator. This advance preparation makes assembling the lasagna a quick and enjoyable task.
- **Mastering the Béchamel:** The béchamel sauce, while having a reputation for being tricky, is surprisingly straightforward. The key is consistent whisking to prevent lumps and to ensure even cooking, avoiding any burning at the bottom of the saucepan. Should you encounter any stubborn lumps, a quick blend in a blender or food processor will quickly transform it into a perfectly smooth, velvety sauce. Don’t let a few lumps deter you!
- **Choosing Your Chicken:** I highly recommend using Italian-flavored chicken sausage meat for its pre-infused spices and seasonings, which add incredible depth without extra effort. It’s a fantastic time-saver. If chicken sausage isn’t available, quality minced chicken can be used, seasoned generously with Italian herbs like oregano, basil, and a pinch of red pepper flakes for similar robust flavors. If poultry is not an option, pork sausage is another excellent substitute.
- **Embracing Winter Greens:** While spinach and tenderstem broccoli provide a wonderful texture and flavor, feel free to explore other winter greens. Cavolo nero (black kale) and rapini (broccoli rabe) are excellent choices, offering a delightful bitterness that balances the creamy richness of the lasagna. Any hearty winter green that holds up well to cooking can be incorporated.
- **Pasta Perfection:** For convenience, I typically use oven-ready lasagna sheets, eliminating the need for pre-boiling. This saves a significant amount of time and effort. To ensure the lasagna cooks evenly and the pasta sheets become perfectly tender, cover the baking dish with aluminum foil for the first 30 minutes of baking. This traps steam and moisture. Afterwards, remove the foil to allow the cheesy top layer to brown beautifully and achieve a delightful golden crispness.
- **The Art of Resting:** This step is crucial for achieving the perfect slice. Once baked, allow your lasagna to rest for at least 30 minutes before cutting and serving. This resting period allows the layers to set, preventing the lasagna from falling apart and ensuring clean, beautiful slices. It also cools the dish down slightly, preventing burnt mouths and enhancing the enjoyment of every flavorful bite.

Elevate Your Meal: Inspired Serving Suggestions
Transform your white chicken lasagna into a grand Italian feast with thoughtful pairings. An authentic three-course Italian meal often begins with an array of antipasti to awaken the palate. Consider delicate crostini topped with fresh ingredients or vibrant bruschetta, offering a delightful crunch and burst of flavor to start.
To elegantly balance the rich and creamy lasagna, a light and refreshing salad is an absolute must. My personal favorites include the rustic and robust Tuscan Panzanella, with its fresh tomatoes and crusty bread, or a warm Warm Zucchini Salad, which offers a lovely contrasting texture and a hint of garden freshness.
Conclude your memorable meal with a delightful dolce. This recipe for individual Amaretti Tiramisu is not only incredibly easy to prepare but also exceptionally delicious, providing a sweet and airy finish that perfectly complements the savory main course. Pair your lasagna with a medium-bodied white wine, such as a crisp Pinot Grigio or a delicate Vermentino, to enhance the flavors without overpowering them.

Equipment
- Lasagna pan
Ingredients
Main Ingredients
- 2 tbsp olive oil, divided
- 200g/7 oz tenderstem broccoli (broccolini)
- 250g/8 oz fresh spinach, or frozen and defrosted
- 4 cloves garlic, divided
- 1/4 tsp dried chilli flakes
- Salt to taste
- 1/2 onion, chopped
- 500g/1 lbs Italian flavored chicken sausage meat (e.g., Heck brand)
- 250g/8 oz grated mozzarella
- 100g/3.5 oz Parmesan cheese
For the Béchamel Sauce
- 75g/1/3 cup butter
- 75g/1/2 cup all-purpose flour
- 1 litre/4 cups whole milk
- 500ml/2 cups chicken stock
- Pinch nutmeg
- 1 bay leaf
- Salt to taste
- 9 sheets lasagna (or enough for 3 layers, no pre-boiling needed)
Instructions
- Heat 1 tbsp of olive oil in a large frying pan. Add the tenderstem broccoli and defrosted, drained spinach along with a pinch of salt, chilli flakes, and 2 cloves of thinly sliced garlic. Cover with a lid and cook over low heat for 10 minutes, or until the broccoli has softened but still retains a slight bite. Remove the greens to a plate and allow to cool slightly.
- In the same pan, add the remaining 1 tbsp of olive oil. Sauté the chopped onion for about 5 minutes until softened. Add the remaining 2 cloves of minced garlic and the Italian chicken sausage meat. Cook over medium heat, breaking up the meat with a spoon, until it is fully cooked through and lightly browned.
- To prepare the Béchamel sauce, melt the butter in a medium saucepan over medium heat. Add the flour and whisk continuously to combine, creating a roux. Cook for 2-3 minutes until the mixture smells slightly nutty, being careful not to brown it. Gradually pour in the cold milk and chicken stock, whisking constantly to prevent lumps. Season the sauce with salt, a pinch of freshly grated nutmeg, and add the bay leaf. Continue to cook over low heat, stirring frequently, until the sauce thickens to a creamy consistency, about 10 minutes. Remove the bay leaf before assembling.
- Preheat your oven to 180°C (350°F). To begin assembling the lasagna, spread a thin, even layer of the béchamel sauce over the bottom of a 9×13 inch rectangular baking pan. Ensure the pan is deep enough to accommodate three generous layers.
- Arrange the first layer of lasagna sheets over the béchamel sauce. Evenly spread half of the cooked winter greens mixture over the pasta. Follow this with one-third of the béchamel sauce, then sprinkle with one-third of the grated Parmesan cheese and one-third of the grated mozzarella.
- Place another layer of lasagna sheets on top of the cheese. Spread half of the cooked chicken sausage meat mixture over these pasta sheets. Follow with another one-third of the béchamel sauce, then sprinkle with one-third of the grated Parmesan and one-third of the grated mozzarella.
- Complete the layering with the final layer of lasagna sheets. Spread the remaining chicken sausage meat over the pasta, followed by all remaining winter greens. Pour the rest of the béchamel sauce evenly over the top, ensuring all pasta is covered, then generously sprinkle with the remaining grated Parmesan and mozzarella cheeses.
- Cover the lasagna pan tightly with aluminum foil. Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and continue baking for another 15-20 minutes, or until the lasagna sheets are perfectly tender, the sauce is bubbling, and the top is beautifully golden brown and caramelized.
- Allow the cooked lasagna to rest for at least 30 minutes before cutting into squares and serving. This crucial resting time allows the layers to set properly, ensuring cleaner slices and a more enjoyable eating experience.
