Italian Sausage Pasta is a delightful treat. Swapping regular sausage for Italian-flavored chicken sausage makes for a lighter, yet incredibly flavorful, meat-based meal.

  • 500g / 1 lbs pasta, any shape
  • 1 tbsp olive oil, extra virgin
  • 350g / 12 oz Italian sausage, (we used chicken sausage)
  • 1 tbsp butter
  • 200g / 2 cups button mushrooms, sliced
  • salt and pepper to taste
  • 80ml / 1/2 cup dry white wine, such as Chardonnay, Sauvignon Blanc or Pinot Grigio
  • 375ml / 1½ cup double cream/heavy cream
  • 100g / 1 cup Parmesan cheese, freshly grated

Instructions

  1. Cook the pasta in a pot of salted boiling water according to package instructions until al dente.
  2. Meanwhile, heat the olive oil in a large frying pan over medium heat. Remove the casing from the Italian chicken sausage, add it to the pan, and break it up into chunks with a spatula. Cook until it’s fully cooked through and browned, then remove the sausage to a plate and set aside.
  3. In the same pan, melt the butter. Add the sliced mushrooms and fry them over medium-high heat until golden brown and caramelized. Season with salt and pepper only after they have browned. Deglaze the pan with the dry white wine, bringing the heat down to medium, and let it simmer until the wine is reduced in volume by about half. Stir in the heavy cream and freshly grated Parmesan cheese, allowing the cheese to melt into the sauce. Return the cooked sausage to the pan and stir to combine. Taste and add more salt if needed.
  4. Drain the cooked pasta, reserving about ½ cup of the starchy pasta water. Add the drained pasta directly to the sauce in the pan and toss to combine thoroughly, ensuring every piece of pasta is coated.
