These baked meatballs in rich tomato and pesto sauce with mozzarella and arugula could be made in a matter of minutes, perfect for a weeknight dinner.

Ingredients

For the meatballs

  • 500g / 1lbs beef, extra lean
  • 500g / 1lbs pork, extra lean
  • 1 egg
  • 1 tsp of each dried basil and oregano
  • 75g / 3/4 cup breadcrumbs
  • 1 tsp salt
  • 1 tbsp olive oil

For the sauce

  • 1 tbsp olive oil
  • 2-3 garlic cloves, minced
  • 4-5 fresh basil leaves, chopped
  • 2 x 400g/ 14oz cans chopped tomatoes
  • 3 tbsp basil pesto
  • salt to taste

Additional ingredients

  • 100g / 2 cups arugula/rocket
  • 125g / 1/2 cup fresh mozzarella balls, small
  • 4 cherry tomatoes, halved
  • 4-5 basil leaves, optional

Instructions

  • Preheat the oven to 400℉/200℃.
  • In a large bowl, combine ground beef and pork, the beaten egg, dried basil and oregano, breadcrumbs, and salt. Mix thoroughly until just combined, then shape the mixture into approximately 20 uniform meatballs. (Alternatively, use high-quality store-bought meatballs and skip this step for an even quicker meal.)
  • (Baking method) Arrange the meatballs in a single layer on a parchment paper-lined, rimmed baking sheet. Bake in the preheated oven at 200℃/400℉ for 10 minutes. At this stage, the meatballs will be partially cooked but not entirely through.
  • OR….(Frying method) Heat 1 tbsp of olive oil in a large frying pan over medium heat. Brown the meatballs on all sides until nicely colored, but do not cook them all the way through. Remove the browned meatballs from the pan and set them aside.
  • In the same pan (or a clean one if preferred), add another 1 tbsp of olive oil. Sauté the minced garlic and chopped fresh basil for about 1 minute until fragrant. Then, add the canned tomatoes (you can process them in a blender until smooth for a finer sauce, or leave them chunky for added texture). Stir in the 3 tbsp of basil pesto and season with salt to taste. Bring the sauce to a gentle boil, then reduce the heat and let it simmer for approximately 5-7 minutes, allowing the flavors to meld.
  • Carefully return the partially cooked meatballs to the pan, nestling them into the simmering sauce. Add the arugula and gently mix to combine. Finally, scatter the mini mozzarella balls, halved cherry tomatoes, and optional basil leaves evenly over the top of the meatballs and sauce.
  • Place the pan back into the preheated oven and bake for an additional 30 minutes, or until the sauce is bubbly, the meatballs are cooked through, and the mozzarella is gloriously melted and lightly golden. Serve immediately and enjoy!
