Ingredients
For Meringue Kisses
- 150g / 5 large egg whites
- 300g / 1 1/2 cups fine/caster sugar
- 1 tbsp cocoa powder, for dusting
For Hot Chocolate
- 500ml / 2 cups whole milk
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ginger
- 1/4 tsp cloves
- 1 tsp vanilla extract
- 100g / 3.5 oz dark chocolate, finely chopped
Instructions
For Meringue Kisses
- Line a baking sheet with parchment paper, ensuring it lies flat.
- Preheat your oven to a high temperature of 400°F (200°C). Spread the caster sugar evenly on your prepared baking sheet and heat it in the preheated oven for 5 minutes, or until you notice the edges of the sugar just beginning to melt and caramelize slightly.
- While the sugar is warming, place your egg whites into the impeccably clean, grease-free bowl of a stand mixer. Begin whisking on a slow speed, gradually increasing to high speed until the egg whites form firm, stiff peaks.
