This creamy pasta recipe is more than just a meal; it’s a journey for your taste buds, bringing the vibrant culinary spirit of Southern Europe straight to your home. With classic ingredients like al dente pasta, sweet tomatoes, aromatic garlic, fresh basil, and nutty Parmesan, every forkful is a celebration of flavors reminiscent of cherished family holidays and gastronomic discoveries.
What makes this dish truly special is its unique blend of simplicity and depth. It’s a versatile recipe that allows for customization while delivering an intensely satisfying experience. The preparation is straightforward, designed for busy individuals who refuse to compromise on taste. Whether you’re a seasoned chef or a beginner, you’ll appreciate how easily this recipe comes together, transforming simple ingredients into a gourmet delight.
The Heart of Southern Italy: Sun-Dried Tomatoes & Pancetta
Sun-dried tomatoes are the unsung heroes of many Mediterranean dishes, and in this recipe, they truly shine. Traditionally air-dried on ceramic rooftops under the intense Southern European sun, these tomatoes undergo a dehydration process that concentrates their natural sugars and intensifies their savory, slightly sweet, and tangy flavor. This potent flavor means a little goes a long way, ensuring a powerful punch of taste without overwhelming the other ingredients.
While the traditional method of sun-drying is fascinating, there’s no need to embark on your own drying adventure! High-quality sun-dried tomatoes are readily available in jars, packed in oil, or even as a concentrated pesto at most supermarkets. These convenient options make it effortless to incorporate their unique essence into your cooking. They are the key ingredient that will elevate your everyday chicken pasta, adding a complex layer of flavor that feels both gourmet and comforting.
Adding pancetta to this dish introduces another authentic Italian element. Pancetta, a cured pork belly, offers a slightly salty, savory, and rich flavor that beautifully complements the creamy tomato sauce. Its crisp texture, once cooked, provides a delightful contrast to the softness of the pasta and the creaminess of the sauce. If pancetta is not available in your area, or if you simply prefer a different flavor profile, smoked bacon makes an excellent substitute, imparting a delicious smoky note to the dish.

The Secret to Silky Smoothness: Cream Cheese Pasta Sauce
The true genius behind the effortless elegance of this recipe lies in the use of cream cheese. Forget the complexities of making a cheese sauce from scratch, complete with roux and slow stirring to prevent lumps. With cream cheese, achieving a velvety, luxurious sauce is incredibly simple. Just stir in a store-bought pack, and you’re guaranteed a perfectly smooth, silky texture every time. No lumps, no fuss – just pure, creamy indulgence.
This cream cheese base creates a remarkably rich and comforting texture that’s universally loved. Like many classic pasta sauces, it serves as a fantastic foundation for endless culinary creativity. In this particular recipe, the tangy sweetness of sun-dried tomatoes provides a brilliant counterpoint to the richness of the cream cheese, resulting in a harmonious flavor balance that is both exciting and deeply satisfying.
When it comes to pasta shapes, this versatile sauce pairs beautifully with any variety that can “catch” and hold the creamy goodness. Tubular shapes like penne, fusilli, or macaroni are excellent choices, ensuring every bite is loaded with flavor. However, don’t let a lack of specific shapes deter you; long, thin pastas like spaghetti or linguine will also work wonderfully, twirling beautifully with the sauce.
Adding Protein: Delicious Chicken Pasta (or Go Vegetarian!)
This creamy pasta recipe is wonderfully adaptable, catering to various dietary preferences. Whether your family prefers a heartier meal or a lighter, plant-based option, this dish can be easily adjusted. I often include chicken because it’s an excellent, affordable source of lean protein and a consistent family favorite. It adds substance and makes the dish a complete meal.
I recommend using boneless, skinless chicken breast, sliced into bite-sized chunks. This ensures that the chicken cooks quickly and evenly, and that each forkful of pasta delivers a perfect combination of tender chicken, luscious sauce, and perfectly cooked pasta. However, if you’re aiming for a vegetarian meal, feel free to omit the chicken entirely. The sauce is flavorful enough to stand on its own, especially with the addition of pancetta (or a vegetarian alternative like smoked tofu or mushrooms).

Expert Tips for Creamy Pasta Perfection
Recipe Notes and Pro Tips
- **Pasta Power:** While any pasta shape works, tubular shapes like macaroni, penne, or rigatoni are fantastic for capturing more of the creamy sauce in every bite, maximizing flavor.
- **Pancetta vs. Bacon:** For an authentic Italian touch, pancetta is ideal. If it’s hard to find, good quality smoked bacon is a wonderful substitute that will add a delicious smoky depth to your pasta. For a lighter dish, you can omit both the pancetta and chicken.
- **Customize Your Protein:** Chicken is a fantastic addition, but this recipe is incredibly flexible. You can easily make it vegetarian by omitting the chicken and pancetta, or try adding shrimp, Italian sausage, or even plant-based protein alternatives.
- **Veggie Boost:** Enhance the nutritional value and texture by incorporating your favorite vegetables. Spinach, broccoli florets, or thinly sliced zucchini (courgette) wilted into the sauce would be delicious additions.
- **Full-Fat for Flavor & Texture:** Always opt for full-fat cream cheese. Lower-fat varieties tend to split when heated, compromising the smooth texture. Full-fat cream cheese ensures that luxurious, incredibly creamy consistency that makes this dish so irresistible.
- **Sun-Dried Tomato Choices:** The specific form of sun-dried tomatoes (paste, chopped in oil, or rehydrated) doesn’t matter as much as their presence. Use what you can easily find to infuse that sweet, tangy flavor into your sauce.
- **The Magic of Pasta Water:** Don’t drain all the cooking water! Reserve about a cupful to gradually stir into your sauce. The starch in the pasta water is essential for emulsifying the sauce, helping it cling beautifully to the pasta while adding an extra layer of creaminess and adjusting its consistency perfectly.

Serving Your Italian Feast
With its balanced combination of pasta, creamy sauce, and satisfying protein, this cream cheese pasta is a complete and fulfilling meal all on its own. It’s hearty enough to be the star of your dinner table without needing additional accompaniments.
However, if you’re in the mood to expand your culinary experience, a fresh, crisp side can provide a lovely contrast. A simple Garden Salad, dressed with a light vinaigrette, offers a refreshing counterpoint to the richness of the pasta. For those who love an extra touch of indulgence, a batch of hot, buttery Garlic Bread is always a welcome addition, perfect for soaking up every last drop of that incredible sauce.
Storage and Leftovers: Enjoying It Later
It’s easy to make a generous batch of this delicious pasta, and luckily, leftovers are just as delightful! Should you find yourself with extra, the best way to store any remaining pasta and sauce is to transfer it to an airtight container and refrigerate it promptly. While the pasta may lose a bit of its initial al dente bite, the flavors will have even more time to meld and deepen, making for an equally delicious meal the next day.
Ensure that any leftovers, with or without chicken, are consumed within 2-3 days for optimal freshness and safety. To reheat, simply add a splash of water or chicken broth to the pasta to help loosen the sauce, then warm it gently. You can reheat it covered in the oven at a moderate temperature (around 300-325°F or 150-160°C) until heated through, or warm it on the stovetop over medium-low heat, stirring occasionally, until it reaches your desired temperature. This ensures the sauce remains creamy and doesn’t dry out.

Tomato Cream Cheese Pasta with Chicken and Pancetta
By Julia Frey of Vikalinka
Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Servings: 6

This smooth cream cheese pasta transports you to Southern Italy with the rich flavors of sun-dried tomatoes and pancetta.
Equipment
- Our Place Always Pan (or any large skillet/pot)
Ingredients
- 160g / 6oz smoked pancetta or bacon
- 450g / 1 lb chicken breasts, skinless and boneless
- Salt, to taste
- 130g / 1/2 cup sun-dried tomato paste or finely chopped sun-dried tomatoes
- 4-5 fresh basil leaves, sliced, or 1/2 tsp dried basil
- 2 cloves garlic, minced
- 200g / 7oz full-fat cream cheese
- 450g / 1lb pasta (e.g., macaroni, penne, fusilli)
- 2 tbsp Parmesan cheese, grated, for serving
Instructions
- Begin by cooking the pasta in a large pot of salted boiling water according to package instructions until al dente. While the pasta cooks, proceed with the sauce.
- In a large pan, cook the pancetta (or bacon) over medium heat until crispy and the fat has rendered. Remove the cooked pancetta from the pan and set it aside, leaving about 1-2 tablespoons of rendered fat in the pan.
- Add the chicken breast chunks, seasoned with a pinch of salt, to the same pan. Brown them on all sides until golden and cooked through, which should take approximately 7-10 minutes, depending on the size of the pieces. Remove the chicken and set aside with the pancetta.
- Reduce the heat to low. Return the cooked pancetta to the pan. Add the sun-dried tomato paste (or chopped sun-dried tomatoes), sliced fresh basil (or dried basil), and minced garlic. Cook, stirring constantly, for about 2 minutes until fragrant.
- Carefully add a couple of ladles of the reserved pasta water directly from the pot to the pan. Let it bubble gently for 2 minutes, then stir in the full-fat cream cheese until it melts completely and forms a smooth sauce.
- Once the pasta is cooked, drain it, reserving about 125ml / 1⁄2 cup of the starchy pasta water. Add the drained pasta and the cooked chicken directly into the pan with the cream cheese sauce.
- Toss everything together until the pasta and chicken are thoroughly coated in the creamy sauce. Season with salt to taste. If the sauce seems too thick or dry, add a splash of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
- Serve immediately, garnished generously with freshly grated Parmesan cheese.
Notes
- Tubed pasta shapes (like macaroni, penne, rigatoni) work exceptionally well as they effectively capture and hold more sauce, ensuring every mouthful is a creamy delight. However, feel free to use any pasta shape you have on hand.
- For an authentic Italian flavor, use pancetta. If pancetta is unavailable, smoked bacon is a great substitute that will add a pleasant smoky taste to the dish. For a lighter version, both pancetta and chicken can be omitted.
- Customize your dish further by adding vegetables such as fresh spinach (stirred in at the end until wilted), steamed broccoli florets, or sautéed zucchini (courgette) for extra fiber and nutrients.
- Always use full-fat cream cheese to prevent the sauce from splitting and to ensure the creamiest, most luxurious texture.
- The intensity of sun-dried tomatoes can vary, whether you use paste, chopped pieces in oil, or rehydrated ones. Any form will contribute significantly to the dish’s unique flavor profile.
- Remember to reserve some pasta cooking water. Its starch content is invaluable for adjusting the sauce’s thickness and helping it emulsify, creating a silkier, more cohesive sauce.
