Plums: The Understated Jewel of Summer
Plums are, without a doubt, one of summer’s most underrated treasures. Often overshadowed by peaches, berries, and cherries, these versatile stone fruits offer an incredible depth of flavor, from tart to intensely sweet, making them perfect for both fresh eating and baking. What’s more, they are typically inexpensive and widely accessible, making them a fantastic choice for home cooks looking to experiment with seasonal produce.
My own appreciation for plums stems from childhood summers spent at my grandparents’ house. Their garden, a thriving haven of fruits and vegetables, always yielded an abundant harvest of plums. Unlike other fruit trees that occasionally faltered, the plum trees consistently delivered buckets overflowing with dark, jewel-toned fruits. This annual bounty meant my mother and grandmother embarked on a yearly ritual of preservation, transforming the ripe plums into delectable jams, rustic pies, and even incorporating them into nourishing breakfast porridges. While the plum jam was undoubtedly tasty, the sheer quantity I was encouraged (or perhaps, insisted upon) to consume as a child sometimes left me with a playful aversion to it. Thankfully, my adult palate has rediscovered the joy of plums, especially when baked into comforting desserts.
Baking with plums is a particularly delightful experience. Their natural sweetness, tartness, and ability to hold their shape during cooking make them ideal for various baked goods. One of the very first recipes I ever shared on this blog, my vibrant Yellow Plum and Blueberry Galette, perfectly showcases their charm. Plums truly shine when their flavors are intensified by heat, releasing their sweet juices and turning beautifully tender.
Among the many varieties, my personal favorite for baking is the Italian Prune Plum. These small, oval-shaped plums boast a deep, almost purple skin that conceals a rich amber flesh. When perfectly ripe, they offer a delightful balance of sweetness with a subtle tart undertone. What makes them truly special for baking is their transformation during cooking; their flesh deepens into a vivid, ruby-red hue, creating a stunning visual contrast in any dessert. This very variety was the star of my elegant Plum Tarte Tatin with Lavender Cream, a testament to their exceptional baking qualities. While Italian Prune Plums are a fantastic choice, feel free to use other firm, ripe plum varieties available to you. Just remember that softer plums might release more juice, so a little extra flour in the filling can help maintain the desired consistency.

The Irresistible Charm of Plum Cobbler: Effortless Elegance
While my husband remains a devoted fan of traditional pies, I confess my heart truly belongs to cobblers and crisps. There’s an undeniable allure to these rustic desserts that lies in their simplicity and the unique texture of their toppings. Forget the fuss of intricate pie crusts; cobblers offer a more relaxed approach to baking, yielding equally, if not more, satisfying results. The soft, biscuit-like topping, often studded with delightful additions, provides a comforting contrast to the tender, bubbling fruit filling underneath.
The plum cobbler recipe I’m sharing today is a delightful evolution of my highly acclaimed Rhubarb Cobbler. The foundation of its success lies in its irresistible scone-like topping. This tender, buttery crust is lovingly scooped over a bed of ripe plums, which have been gently tossed with sugar and a touch of flour to create a perfectly thick, glistening sauce as it bakes. The beauty of this topping is its ability to absorb the fruit’s juices while developing a beautifully golden and slightly crisp exterior, mimicking the comforting texture of freshly baked scones.
To elevate the flavor profile of the plums, I’ve introduced a dash of crème de cassis, a blackcurrant liqueur, into the fruit filling. This optional but highly recommended addition imparts a subtle berry note and a touch of sophisticated sweetness that beautifully complements the plums. If crème de cassis isn’t readily available, don’t fret! Any berry liqueur, such as crème de mure (blackberry liqueur), would be equally delicious, adding another layer of fruity complexity to your cobbler. Even a splash of orange liqueur or vanilla extract could lend a wonderful aroma and taste.
The cobbler topping itself is a testament to simple ingredients working in harmony to create something extraordinary. It begins with a classic combination of all-purpose flour, granulated sugar, baking powder for lift, and a pinch of salt to balance the flavors. Cold butter is then cut into this dry mixture, creating those signature crumbly bits that result in a tender, flaky texture. What truly sets this topping apart are the additions of rolled oats, which lend a delightful chewiness and rustic charm, and a handful of chopped walnuts for an extra layer of crunch and nutty flavor. If walnuts aren’t your preference, thinly sliced almonds or pecans would also be a fantastic alternative, adding their own unique character to the dessert. Finally, milk is gently incorporated until just moistened, ensuring a tender and light topping that bakes to golden perfection.

Elevating Your Plum Cobbler Experience: Serving and Enjoying
The magic of a freshly baked plum cobbler truly comes alive when it’s served warm, allowing its fragrant aromas to fill the kitchen and its tender fruit filling to gently bubble. Without a doubt, my absolute favorite way to enjoy this quintessential summer treat is with a generous scoop of rich, creamy vanilla bean ice cream melting slowly over its golden, scone-like topping. The delightful contrast between the warm, sweet-tart fruit and the cold, smooth ice cream creates a symphony of textures and temperatures that is simply irresistible.
However, if the hot-and-cold combination isn’t to your taste, or if you prefer a lighter accompaniment, a cloud of freshly whipped cream makes an equally delightful pairing. The sweet, airy richness of whipped cream adds a touch of luxurious indulgence to this otherwise humble and earthy dessert, enhancing the fruit’s natural sweetness without overwhelming it. For an extra touch, consider infusing your whipped cream with a hint of vanilla, almond extract, or even a touch of cinnamon to complement the plums.
Beyond these classic pairings, feel free to get creative. A dollop of tangy crème fraîche or mascarpone cheese can offer a sophisticated counterpoint to the sweetness of the plums, adding a creamy texture and a subtle hint of sourness. Greek yogurt, either plain or lightly sweetened, can also provide a lighter, healthier option that still delivers a delightful tang. For those who appreciate a rich, custardy finish, a warm vanilla custard or a simple English pouring cream would also be excellent choices, enveloping the fruit and topping in a silky embrace.
Garnishes can also elevate the presentation and flavor of your plum cobbler. A sprinkle of cinnamon or nutmeg over the topping before baking, or a dusting of powdered sugar just before serving, adds a lovely visual touch and a hint of spice. A few fresh mint leaves can also provide a refreshing, aromatic accent. Whatever your preference, the key is to enjoy this delightful dessert while it’s still warm, savoring every spoonful of its comforting, fruity goodness. Leftovers, if there are any, can be stored covered in the refrigerator for up to 3 days and gently reheated in the oven or microwave, though the topping might lose some of its crispness.

Italian Plum Cobbler
Equipment
-
Pie dish
-
Mixing bowls
-
Pastry blender
Ingredients
- 750g / 4 cups Italian plums
- 200g / 1 cup brown sugar
- 3 tbsp flour
- 2 tbsp creme de cassis, optional
For the cobbler topping
- 120g / 1 cup all-purpose flour
- 1½ tsp baking powder
- 50g / 1/4 cup granulated sugar, I used Demerara sugar
- 1/4 tsp salt
- 120g / 1/2 cup cold butter
- 50g / 1/2 cup oats, not instant
- 30g / 1/4 cup walnuts, chopped, optional
- 150ml / 2/3 cup milk
Instructions
-
Preheat the oven to 190°C / 375°F. Prepare the plums by cutting them in half and carefully removing the stones. In a large mixing bowl, combine the pitted plums with brown sugar, flour, and the optional blackcurrant liqueur (crème de cassis) if you are using it. Toss gently to coat the plums evenly, then set aside to allow the flavors to meld slightly.
-
In a separate, medium-sized bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined. Add the cold, cubed butter to this dry mixture. Using a pastry blender or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. This step is crucial for a tender topping. Next, gently fold in the oats and chopped walnuts (if using), stirring briefly. Finally, pour in the milk and stir just until the dry ingredients are moistened. Be careful not to overmix, as this can lead to a tough topping.
-
Evenly spoon the plum and sugar mixture into the bottom of a deep 9-inch pie plate or a 2-quart (2-liter) baking dish. Then, using a large spoon, drop generous spoonfuls of the prepared cobbler topping mixture over the sugared plums, leaving some small gaps in between to allow steam to escape and the fruit to bubble through. Bake in the preheated oven for 40-45 minutes, or until the topping is beautifully golden brown and the plum filling is visibly bubbling around the edges.
