I recall a charming anecdote about the invention of Eggs Benedict, born from a diner’s complaint that there was “nothing new” to eat for breakfast. It’s a sentiment many of us can relate to. Often, restaurant menus tend to stick to familiar favorites, offering little in the way of culinary adventure. That’s why it’s truly remarkable when an establishment manages to present something genuinely innovative and exciting, pushing the boundaries of what breakfast can be.

The inspiration for this particular recipe stems from a memorable breakfast my husband and I shared in a quaint, unassuming English town. Its name escapes me now, but the vivid memory of that delightful breakfast has stayed with me. It was a simple yet profoundly satisfying combination of flavors and textures that left a lasting impression, sparking my desire to recreate that magic in my own kitchen. What you see depicted in the image below is my heartfelt homage to that inspiring meal.

My version features the bold, smoky notes of Spanish chorizo, lovingly fried until crispy, mingling with tender, sautéed shallots. Cubed potatoes, perfectly seasoned with salt and a touch of fragrant smoked paprika, form the comforting base. Two perfectly cooked eggs crown this savory medley, their yolks ready to burst and enrich every bite. And, of course, a generous topping of salty, crumbly feta cheese provides that essential tangy contrast, elevating the entire dish to a new level of deliciousness. This isn’t just breakfast; it’s a gourmet experience crafted with simplicity and passion.

What is a Breakfast Hash? Delving into a Comfort Food Classic

For many, including myself, hash is the epitome of comfort food. There’s something inherently soothing and deeply satisfying about the combination of meat and potatoes cooked together, especially when served for breakfast. The very word “hash” originates from the French “hacher,” meaning “to chop.” This etymology perfectly encapsulates the essence of the dish: finely chopped ingredients, typically fried together in a skillet.

Traditionally, a hash consisted of diced or chopped meat (often leftover from a previous meal) and cubed potatoes, fried until golden and crisp, usually with onions. However, the modern interpretation of hash is incredibly flexible and expansive. Nowadays, if you’re chopping and frying various ingredients together in a pan, you’ve essentially created a hash! This adaptability is precisely what makes it such a beloved dish.

While hash can certainly be enjoyed at any time of the day – it makes a fantastic lunch or dinner – it is most commonly associated with breakfast. When served as a morning meal, eggs are almost always incorporated, either scrambled, fried, or poached on top, adding a rich, runny yolk that beautifully complements the savory base. This Chorizo Breakfast Hash perfectly embodies that classic breakfast hash spirit, elevating it with the bold flavors of Spanish chorizo and the tangy kick of feta.

One of the most appealing aspects of the entire hash concept is its remarkable economy. It’s a brilliant way to repurpose dinner leftovers, transforming remnants into a brand new, delicious meal. It’s also perfect for utilizing those odd bits and pieces you might have lingering in your fridge – a stray potato, a half onion, a few slices of sausage. This resourceful nature has made breakfast hash a popular and practical dish for centuries, enjoyed since at least the 1800s. Its ability to stretch ingredients and minimize waste, while delivering maximum flavor and satisfaction, ensures its enduring appeal.

Mastering Your Chorizo Breakfast Hash: Essential Tips and Variations

  • **Choosing Your Chorizo:** This recipe features cured Spanish chorizo, known for its firm texture and intense, smoky flavor. It cooks quickly, rendering delicious fat that’s essential for flavoring the potatoes. If you opt for fresh Mexican chorizo sausage, note that it requires longer cooking to ensure it’s fully cooked through and crumbled. Adjust cooking times accordingly, breaking it up as it cooks.
  • **Flavor Foundation:** The key to an incredibly flavorful hash lies in building layers of taste. Start by cooking the chorizo first. As it crisps, it will release its flavorful oils into the pan. This rendered fat is liquid gold! Immediately sauté your minced shallot (or onion) in this flavorful chorizo fat, allowing it to soak up all the delicious essence before you remove them from the pan.
  • **Perfectly Golden Potatoes:** After removing the chorizo and shallots, cook your cubed potatoes in the very same pan, utilizing the remaining chorizo fat. This step is crucial for imparting maximum flavor to your spuds, giving them a rich, savory crust. Ensure you turn them frequently to brown all sides evenly.
  • **Crispy Potato Shortcut:** For an even crispier, and often leaner, potato base, consider cooking your cubed potatoes in an air fryer before adding them to the hash. Our method for the best golden air fryer potatoes will give you beautifully crisp results every time.
  • **Egg Perfection:** I personally adore a runny egg yolk, which acts as a natural, rich sauce for the hash. To achieve this, simply cook the eggs for a couple of minutes until the whites are set but the yolks remain wonderfully liquid. If you prefer your egg yolks fully cooked, simply cover the pan with a lid or even a baking sheet for a few extra minutes. This steams the eggs, resulting in perfectly cooked, yet still creamy, yolks.
  • **Cheese and Herb Pairings:** While crumbled feta offers a fantastic salty tang and creamy texture, feel free to experiment! Other cheeses like grated sharp cheddar, Monterey Jack, or even a soft goat cheese could offer delightful variations. For herbs, fresh parsley or chives provide a bright, fresh finish, but chopped cilantro or spring onions could also complement the chorizo beautifully.
  • **Scaling Up:** This recipe is easily adaptable for a larger crowd. You can effortlessly double or triple the ingredients, provided you have a large enough pan or skillet to accommodate the increased volume without overcrowding, which is essential for ensuring everything cooks evenly and gets properly browned.
  • **Serving Suggestions:** This Chorizo Breakfast Hash is a complete meal on its own, but it pairs wonderfully with a side of toasted crusty bread, sliced avocado, or a dollop of your favorite hot sauce for an extra kick.

Golden fried potatoes, spicy chorizo, and perfectly cooked eggs with a sprinkling of feta cheese make this breakfast hash truly irresistible.

Equipment

  • Cast iron skillet

Ingredients

  • 1 tbsp olive oil
  • 70g/1/2 cup diced cured Spanish chorizo, or 3.5 oz of Mexican chorizo
  • 1 shallot, or 1/2 small onion
  • 2 medium potatoes, cubed
  • salt
  • 1/2 tsp smoked paprika
  • 2-3 eggs
  • 2 tbsp crumbled feta
  • 1 tbsp parsley or chives for garnish

Instructions

  • Heat the olive oil in a frying pan. Add the diced cured chorizo and cook for 2 minutes over low heat until it releases its flavorful oil. Stir in the minced shallot and cook for 3-5 minutes longer, until softened. Remove the chorizo and shallots to a separate plate.
  • To the same pan (with the rendered chorizo fat), add the cubed potatoes along with a pinch of salt and the smoked paprika. Cook them over medium heat, turning frequently to ensure all sides are equally browned and crispy. This will take approximately 10 minutes for the potatoes to cook through. If they still feel a bit firm after 10 minutes, cover the pan with a lid for a couple of minutes to steam them and speed up the cooking process.
  • Once the potatoes are tender and golden, return the cooked chorizo and shallots to the pan and give everything a quick mix to combine. Create small wells or free up space for the eggs by moving some of the hash aside, then crack the eggs directly into the pan. Cook for a couple of minutes for delicious soft, runny egg yolks. Sprinkle the crumbled feta cheese all over the hash. If you prefer your yolks to be fully cooked and opaque, simply cover the pan with a lid; the steam will cook the eggs through. Serve immediately, garnished with fresh parsley or chives.

Notes

This recipe specifically uses Spanish cured chorizo, which is already cooked and only needs to be heated through to release its oils and crisp up. If you opt for raw Mexican chorizo sausage, please be aware that your cooking time will be longer, as it needs to be thoroughly cooked and crumbled before serving.
