Fresh stuffed pasta, whether it’s tortellini, tortelloni, or ravioli, holds a special place in my heart as the ultimate choice for a quick, comforting, and undeniably delicious meal. These delightful dumplings are my go-to solution when kitchen time is scarce but flavor cannot be compromised. Their convenience makes them a true weeknight hero, allowing anyone to whip up an Italian-inspired feast without hours of effort.
My fondness for these pockets of deliciousness stems from a childhood spent enjoying various types of dumplings. This culinary heritage instilled in me an appreciation for the simple joy a well-made dumpling can bring. Beyond nostalgia, the widespread availability of high-quality fresh stuffed pasta in supermarkets today makes them an incredibly accessible option for dinner, ready to be paired with a vibrant sauce.
This recipe specifically highlights tortelloni, a term often confused with tortellini. Rest assured, “tortelloni” is not a misspelling but refers to a distinct type of Italian stuffed pasta. While similar in their charming ring or navel shape, they possess unique characteristics that set them apart, and both are equally delightful when drenched in our rich creamy tomato sauce.

Tortellini vs. Tortelloni: Understanding the Delicious Distinction
While often grouped together, tortellini and tortelloni, both exquisite forms of stuffed pasta, offer subtle yet important differences that Italian food enthusiasts appreciate. The most immediately apparent distinction is size: tortelloni are notably larger than tortellini, often approaching the size of small ravioli. This larger format allows for a more generous and varied filling, contributing to a satisfying bite.
Traditionally, tortellini, originating from Emilia-Romagna, are smaller and typically filled with a rich meat mixture, often pork, prosciutto, and Parmesan, and served in a clear broth (in brodo) on special occasions. Tortelloni, on the other hand, usually hail from the same region but are larger and historically filled with vegetarian ingredients such as ricotta cheese and spinach, often served simply with butter and sage. However, in modern culinary practice and supermarket offerings, these traditional distinctions in filling and serving methods have become more fluid. Today, you can find tortelloni stuffed with a myriad of delectable fillings, from pumpkin to various cheeses, mushrooms, and even seafood.
For instance, the tortelloni featured in this very recipe were filled with a decadent combination of mushrooms and mascarpone, proving just how versatile these larger pasta parcels can be. While tradition dictates specific serving styles – tortellini in broth, tortelloni with butter and sage – we embrace culinary liberation by pairing our tortelloni with a quick, easy, and incredibly flavorful creamy tomato sauce. This allows home cooks to enjoy the comfort and elegance of stuffed pasta with a vibrant, modern twist, making it accessible for everyday meals rather than just festive occasions.
Understanding these differences not only enriches your appreciation for Italian cuisine but also helps you choose the perfect pasta for your dish. Whether you opt for the smaller, meat-filled tortellini or the larger, often cheese- or vegetable-filled tortelloni, this creamy tomato sauce recipe is designed to complement their delicate textures and rich fillings beautifully.

Crafting the Perfect Creamy Tomato Sauce for Stuffed Pasta
The star of this dish, beyond the delightful stuffed pasta, is undoubtedly this incredibly versatile and robust creamy tomato sauce. It’s a harmonious blend of rich cream and concentrated tomato flavor, elevated by a touch of aged Italian cheese. This simple combination delivers a depth of flavor that belies its minimal ingredient list and quick preparation time, making it a truly invaluable recipe for your culinary repertoire.
Instead of relying on plain canned tomatoes, which often require longer cooking times to develop flavor, I’ve employed a clever kitchen hack: sun-dried tomato pesto. This condiment is a powerhouse of flavor, packing intensely sweet and tangy notes from the sun-dried tomatoes, savory garlic, aromatic herbs, and often a nutty undertone from cheese or pine nuts. By using sun-dried tomato pesto, you instantly infuse your sauce with a complex, slow-cooked taste in a fraction of the time. It’s the secret weapon for achieving a “killer taste” quickly and efficiently. If sun-dried tomato pesto isn’t readily available, you can approximate this flavor by finely mincing a handful of oil-packed sun-dried tomatoes and sautéing them with a small amount of tomato paste before adding the cream.
To further enhance the sauce’s aromatic profile, minced garlic and fresh basil leaves (or dried basil for convenience) are stirred in, providing a fragrant counterpoint to the richness of the cream and tomatoes. For the creamy base, double cream or heavy whipping cream adds luxurious texture and body. However, for a lighter alternative without sacrificing too much richness, single cream or a lower-fat cream (around 20% fat) can be used. The final touch is a generous amount of aged hard Italian cheese, such as Parmigiano Reggiano, Grana Padano, Pecorino Romano, or Asiago. These cheeses not only contribute a salty, umami depth but also help to beautifully emulsify the sauce, creating a smooth, velvety consistency that clings perfectly to every piece of pasta.
To add a touch of freshness, vibrant color, and a healthy boost, I love to stir in a handful of fresh spinach at the end. The spinach wilts gently into the hot sauce, lending a beautiful green hue and a slight earthiness that complements the creamy tomato base. But the versatility doesn’t stop there! Feel free to experiment with other vegetables you enjoy. Asparagus, tenderstem broccoli (broccolini), kale, or even sautéed mushrooms or bell peppers would make excellent additions. Remember to parboil heartier vegetables like asparagus or broccoli before adding them to the sauce to ensure they are tender and cooked through.
This sauce isn’t just for stuffed pasta; its rich flavor and quick preparation make it an ideal accompaniment for any type of pasta, whether it’s penne, spaghetti, or tagliatelle. It’s truly a must-have recipe to keep up your sleeve for those busy evenings when you need a delicious, satisfying meal in a flash.

This creamy tomato tortelloni dish is incredibly versatile, fitting seamlessly into various meal occasions, from a relaxed weeknight dinner to a more elaborate gathering with guests. For a casual yet delightful weeknight meal, I recommend serving this rich pasta alongside a fresh, light salad. Tortelloni with Creamy Tomato Sauce and Spinach

Ingredients
- 450g/1 lbs fresh tortelloni , or tortellini
- 4 tbsp sun-dried tomato pesto, I used Scala or Delallo in the US
- 1-2 cloves garlic, minced
- 4 basil leaves or 1/2 tsp dried basil
- 250ml/1 cup double/heavy whipping cream
- 30g/1 cup fresh spinach
- 50g/1/2 cup Parmesan Cheese or other hard cheese like Asiago or Pecorino, grated
- salt to taste
Instructions
-
Set a large pot of salted water boiling and cook the tortelloni according to package instructions.
-
Meanwhile, in a large and deep pan, heat the sun-dried tomato pesto together with minced garlic over low heat and fry while stirring for no longer than 30 seconds. Then add the basil, heavy cream, and whisk to combine. Bring to a gentle simmer, then add the spinach and let it wilt for about a minute. Finally, stir in the grated cheese. Take off the heat and keep warm.
-
Drain the tortelloni, reserving 1/2 cup of pasta water. Add the cooked tortelloni directly to the sauce and toss gently to combine, ensuring every piece is coated. If the dish seems a bit dry or too thick, add a splash of the reserved pasta water to loosen it until it reaches your desired consistency. Serve immediately with additional grated Parmesan and freshly cracked black pepper.
Notes
- Tortelloni or Tortellini with any filling are suitable for this recipe.
- You can use fresh or frozen stuffed pasta. Frozen pasta may require a slightly longer cooking time.
- To lighten the sauce, you can use single cream or light cream (20% fat) instead of heavy whipping cream. This will result in a slightly thinner, less rich sauce but still delicious.
- For added flavor, a pinch of red pepper flakes can be added with the garlic.
