- 2 banana shallots, chopped
- 650g / 23oz mixed mushrooms (portobello, shiitake, oyster, button)
- 2 tbsp butter
- Salt to taste
- 2-3 thyme sprigs, leaves only
- 1 bay leaf
- 1 clove garlic, minced
- 4 tbsp cognac (brandy)
- 250g / 9oz cream cheese, full fat
- Black or pink pepper to taste
Instructions
- Melt one tablespoon of butter in a deep frying pan. Add the chopped shallots and sauté over low heat for approximately 10 minutes until they become soft and lightly caramelized. Add the minced garlic and cook for an additional 30 seconds, being careful not to burn it.
