Ingredients

  • 250 g / 2½ cups Scottish porridge oats or rolled oats
  • 4 tbsp coconut oil, melted
  • 4 tbsp Manuka honey
  • 150 g / 1 cup hazelnuts, whole or roughly chopped
  • 4 tbsp Demerara sugar

Instructions

  1. Preheat your oven to 180°C (350°F). Spread the hazelnuts evenly on a baking sheet. Toast them in the preheated oven for about 10 minutes, until fragrant and lightly golden. Be sure to watch them closely to prevent burning. Remove from the oven and allow them to cool slightly before roughly chopping them, if desired.
  2. In a large mixing bowl, combine the rolled oats, melted coconut oil, Manuka honey, Demerara sugar, and your toasted, chopped hazelnuts. Mix all the ingredients thoroughly until the oats and nuts are evenly coated with the wet ingredients. This ensures every bite is flavorful and well-bound.
