Chicken Waldorf salad combines sweet and tart apple chunks, celery, walnuts, and juicy raisins with succulent poached chicken breast for a protein-rich meal.

Ingredients

  • 2 chicken breasts, cooked (I prefer poached)
  • 2 red apples
  • 1 green apple, (Granny Smith)
  • 2 stalks celery
  • 1/3 cup walnuts
  • 1/4 cup raisins, or 1 cup grapes, halved
  • 1/4 cup chopped parsley
  • Salt to taste
  • 1 head romaine lettuce, or gem lettuce

For the dressing

  • 1/2 cup low fat mayonnaise
  • 1/2 lemon, juice only
  • 1/2 tsp Dijon mustard

Instructions

  • Toast the walnuts in the oven preheated to 180C/350F for 5 minutes. Let them cool completely, then chop them into large pieces. Set aside until needed.
  • Cube the cooked chicken breasts. Core and cube the apples. Slice the celery stalks thinly and chop the fresh parsley. In a large mixing bowl, combine the cubed chicken, apples, sliced celery, and your choice of raisins or halved grapes.
  • In a separate small bowl, whisk together the mayonnaise, fresh lemon juice, and Dijon mustard until thoroughly combined and smooth.
  • Pour the prepared dressing over the salad ingredients in the large bowl. Mix gently to ensure all components are evenly coated. Now, add the chopped, toasted walnuts and mix once more.
