Bursting with vegetables as well as plump and juicy prawns this noodle stir fry is quick, healthy and full of flavour!

Ingredients

  • 340g/12 oz Asian medium egg noodles
  • 1 tbsp vegetable oil
  • 250g/1/2 lbs raw prawns (shrimp)
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 3 green/spring onions, sliced (white and green parts separated)
  • 100g/ 1 cup snow peas
  • 100g/ 1 cup bean sprouts
  • 150g/2 cups red or white cabbage, thinly sliced
  • 1 carrot, julienned
  • 1 head broccoli, cut into florets
  • 4 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp white pepper
  • 1 tbsp sesame seeds, for garnish
  • Salt to taste

Instructions

  1. Set a large pot of water over high heat and bring to a rolling boil. Add the noodles and broccoli florets, cooking according to package instructions until al dente. Drain thoroughly and set aside.
  2. Heat the vegetable oil in a wok or a large, deep frying pan over high heat. Add the raw prawns, seasoned with a pinch of salt. Cook for 2 minutes on one side, then flip and cook for another 1 minute until they are completely cooked through and pink. Remove the prawns to a plate and set aside.
  3. To the same hot pan, add the minced garlic, grated ginger, and the white parts of the sliced spring onions. Stir-fry briskly for about 30 seconds until fragrant.
