For the Grazing Board:
- 200g / 7 oz smoked salmon (cold smoked)
- 200g / 7 oz hot smoked salmon
- 50g / 1.7 oz salmon or trout roe
- 3-4 eggs, boiled and halved/quartered
- 1-2 small cucumbers, thinly sliced (Kirby cucumbers recommended)
- 10-12 gherkins / baby pickles
- 3-4 tbsp capers
- 200g / 1 cup creme fraiche or sour cream (for serving with dill/chives)
- Fresh dill, for garnish
- Fresh chives, chopped, for garnish
- Variety of crackers
- A pack of potato crisps / chips (your favourite flavour)
For the Pickled Onion (Prepare in advance):
- 1 red onion, sliced thinly
- 1/4 cup apple cider vinegar
For the Beet Dip:
- 1 large beet, cooked (or pre-cooked)
- 1/2 clove garlic, minced
- 75g / 1/3 cup mayonnaise
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt to taste

- Prepare Pickled Onions (at least a day in advance): Slice the red onion very thinly. Place the slices into a clean mason jar or jam jar. Pour apple cider vinegar over the onions until they are fully submerged. Cover tightly with a lid and refrigerate overnight to allow the flavours to develop.
- Make the Beet Dip: If using raw beetroot, cook it until tender. Peel the cooked beet and cut it into cubes. Transfer the cubed beet to a small food processor.
