  • 1 tsp vanilla extract

For the Meringue Topping

  • 4 egg whites
  • 240 g / 1 cup + 2 tbsp caster sugar

  5. In a separate clean bowl, beat the remaining double cream (or heavy cream) until soft peaks form. Be careful not to overwhip; the cream should still be light and pliable, not stiff. Gently fold the whipped cream into the strawberry cheese mixture using a spatula until no streaks remain and the mixture is uniformly combined.
  6. For easy release, line the sides of the springform pan with a strip of parchment paper. Pour the strawberry cheesecake mixture over the chilled biscuit base in the pan.
