  • 125g/4oz pancetta, or good quality bacon
  • 1 clove garlic, whole and peeled
  • 450g/1 lb short pasta (e.g., penne, rigatoni, fusilli)
  • Salt, for pasta water and seasoning
  • 350ml/1 1/2 cups double/heavy cream
  • 50g/1/2 cup Parmesan cheese, freshly grated
  • 1 tbsp fresh mint, chopped
  • 80g/1/2 cup peas, frozen or fresh
  • Freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of generously salted water to a rolling boil. Add the short pasta and cook according to package directions until al dente (firm to the bite).
  2. While the pasta cooks, heat a large frying pan over medium heat. Add the diced pancetta (or bacon) and the whole, peeled clove of garlic. Cook, stirring occasionally, until the pancetta is crispy and has rendered its fat. The garlic will infuse the fat with a subtle aroma. Once cooked, remove and discard the garlic clove. If using fatty bacon, you may drain any excessive rendered fat, leaving just a tablespoon or two in the pan.
  3. Reduce the heat to low. Add half of the chopped fresh mint, the heavy cream, and the freshly grated Parmesan cheese to the pan with the pancetta. Stir gently and heat until the cheese is completely melted and the sauce is smooth and warm, but do not boil. Stir in the frozen or fresh peas and cook for just 1 minute longer, allowing them to heat through and retain their vibrant color. Taste the sauce and add salt and pepper to your preference. Remove the pan from the heat.
  4. Before draining the cooked pasta, reserve about 1/2 cup of the starchy pasta water. Drain the remaining pasta thoroughly. Add the drained pasta directly to the pan with the creamy pancetta sauce. Add the remaining half of the fresh mint.
