Indulge in the ultimate frozen delight with these irresistible Cappuccino Daim Ice Cream Sandwiches. Without a doubt, this is the most decadent, flavor-packed, and delightfully crunchy ice cream sandwich you’ll ever create at home! This recipe takes the beloved combination of rich coffee, creamy ice cream, and crisp chocolate-toffee to a whole new level, all made effortlessly with a no-churn method. Forget the fuss of an ice cream maker; pure bliss is just a few simple steps away.
There’s something inherently joyful about an ice cream sandwich. It’s the perfect fusion of textures and tastes: the cool, smooth creaminess of the ice cream meeting the satisfying snap of a perfectly chosen cookie. From playful Waffle Ice Cream Sandwiches to gourmet creations, the possibilities for customization are endless. But today, we’re diving into a specific kind of magic, inspired by a classic American treat with a delightful European twist.

While my travels through Italy have instilled in me a deep appreciation for authentic, artisanal gelato, my heart still holds a special place for other ice cream delights. There are certainly moments when nothing but a classic, thick Dairy Queen Blizzard will do! This recipe is born from that very inspiration, a tribute to those nostalgic Heath Blizzards, reimagined as an even more exciting and homemade frozen treat.
Over the years, I’ve often found myself creating recipes inspired by the comforting familiarity of Dairy Queen – from elaborate ice cream cakes for my children’s birthdays to experimenting with my own unique ice cream flavor combinations. This Cappuccino Daim Ice Cream Sandwich is one such creation, taking the essence of that crunchy toffee and chocolate mix and elevating it with rich coffee notes, all nestled between crispy biscuits.

Living in Europe, sourcing Heath bars can be a challenge. But fortunately, we have a truly fantastic and equally beloved equivalent: the legendary Daim bar! Known for its distinctive hard almond toffee center coated in milk chocolate, Daim offers that same satisfying crunch and buttery caramel flavor that makes these ice cream sandwiches so special.
These chocolatey, toffee-infused, and undeniably crunchy Daim bars are almost identical to Heath or Skor bars in their delightful confectionary experience. While a true connoisseur might detect subtle differences in the caramel’s chewiness or chocolate’s richness between Daim, Heath, or Skor, for a recipe like this, any of these delectable toffee bars will perform perfectly. Their primary role is to provide that glorious texture contrast and burst of sweet, buttery flavor against the smooth ice cream.

While a simple blizzard-style milkshake would be delicious, I wanted to create something truly unique and fun. Duplicating a recipe exactly simply isn’t as exciting as innovating! That’s why I opted for an ice cream sandwich. The sheer delight comes from the intricate mix of textures and the harmonious combination of a crispy, yielding cookie with intensely creamy ice cream. Each bite is an experience, a symphony of flavors and sensations that a mere milkshake can’t quite capture.
The Magic of No-Churn Ice Cream
The foundation of these incredible sandwiches lies in my absolute favorite no-churn ice cream recipe. If you’ve never made no-churn ice cream before, prepare to be amazed. It’s remarkably easy, requires no special equipment beyond an electric mixer, and yields an incredibly luxurious, velvety-smooth treat that rivals traditional churned ice cream. The secret lies in the combination of whipped cream and sweetened condensed milk, which, when combined, create a stable, creamy base that freezes beautifully without crystallizing.
This versatile no-churn method is a true game-changer for home dessert enthusiasts. I’ve successfully used this exact base to craft other delightful frozen treats, such as a vibrant Amarena Cherry Gelato and a sophisticated Blackberry and Pistachio Ice Cream Eton Mess. The beauty of this basic technique is its incredible flexibility. Once you master the simple base, you’re free to unleash your culinary creativity and experiment with an endless array of flavor combinations, making it perfect for custom-designed desserts like these cappuccino Daim sandwiches.

To begin making the ice cream, you’ll combine chilled double cream (or heavy whipping cream), sweetened condensed milk, a shot of robust espresso, and both coffee and vanilla extract. An electric mixer is your best friend here, quickly transforming these simple ingredients into a cloud of deliciousness.
Whip the mixture until soft peaks just begin to form. It’s crucial not to over-beat it; we’re aiming for a light, fluffy texture that will become perfectly creamy when frozen, not stiff like traditional whipped cream for topping. This airy consistency is key to the no-churn magic.
Once your exquisite cappuccino ice cream base is ready, it’s time to incorporate the star crunch. Roughly chop your Daim bars (or Heath/Skor, if you’re using those) into small, bite-sized pieces. Gently fold these chocolatey, toffee chunks into the ice cream mixture using a spatula. The goal is to disperse the pieces as evenly as possible throughout the cream, ensuring every spoonful or bite of your sandwich gets a delightful crunch.
Carefully transfer the entire mixture into a freezer-safe container. Ensure it’s sealed tightly with a lid or foil to prevent ice crystals from forming on the surface. Now, the hardest part: patience! Allow the mixture to chill and solidify in the freezer for a minimum of seven hours. For the best results and easiest assembly, I highly recommend preparing the ice cream the night before. This way, it will be perfectly firm and ready for you to assemble your sensational sandwiches the next day.

Assembling Your Dream Ice Cream Sandwiches
While you can certainly use any cookie or biscuit you adore, I have a strong preference for chocolate-covered Digestive biscuits when making these particular sandwiches. Their subtle sweetness and wholesome, wheaty crunch provide a perfect counterpoint to the rich, sweet, and robust flavors of the cappuccino Daim ice cream. They don’t overpower the star of the show but rather complement it beautifully, ensuring the wonderful taste of the ice cream truly shines through.
Digestive biscuits, however, can be a little delicate at room temperature. To prevent them from crumbling or breaking when you add the cold, firm ice cream, a crucial preparatory step is to place them in the freezer for a short while before assembly. This simple trick allows them to harden slightly, giving them the necessary structural integrity to withstand the scooping and pressing, ensuring a perfect sandwich every time.

Now comes the truly fun part: assembling your delicious ice cream sandwiches! This step is wonderfully easy and makes for a fantastic opportunity to get your kids involved in the kitchen. They’ll love helping to create these irresistible treats.
Take one frozen Digestive biscuit and scoop a generous amount of your firm cappuccino Daim ice cream onto its flat side. Don’t be shy with the filling! Then, gently top it with a second biscuit, creating your sandwich. To achieve that polished, professional look, run the back of a spoon or a small spatula around the edges of the sandwich, smoothing out any excess ice cream and creating a neat, clean finish. Repeat this process with the remaining biscuits and ice cream until you have a tray full of perfectly formed sandwiches.

These ice cream sandwiches are truly the ultimate frozen treat, guaranteed to impress your entire family and any guests fortunate enough to taste them. One of the best aspects of this recipe is its make-ahead convenience. You can prepare a large batch of these delightful sandwiches and store them in the freezer, ensuring you always have a readily available supply for whenever that sweet craving strikes.
If you’re planning to save them for later enjoyment, here’s a helpful tip for perfect storage: before returning them to the freezer, place a small sheet of parchment paper between each individual sandwich. This simple barrier prevents them from freezing together, making it incredibly easy to grab a single sandwich whenever you desire, without having to awkwardly wedge them apart. This also helps maintain their pristine shape and texture.
They are perfectly portioned little bites of happiness, offering a built-in control over indulgence. Go ahead, treat yourself to one (or two!) of these exquisite Cappuccino Daim Ice Cream Sandwiches without an ounce of guilt. Enjoy the rich flavors, the creamy texture, and the satisfying crunch that makes each bite an unforgettable moment of pure, frozen bliss.
Cappuccino Daim Ice Cream Sandwiches
By Julia Frey of Vikalinka
- Prep Time: 30 mins
- Total Time: 7 hrs 30 mins
- Servings: 10 sandwiches

Ingredients
- 500 ml / 2 cups double cream (or whipping cream)
- 1 x 395g tin sweetened condensed milk
- 2 tbsp espresso (or instant espresso powder blended with 2 tbsp of water)
- 2 tsp pure coffee extract (optional, for intensified coffee flavor)
- 1 tsp vanilla extract
- 5 Daim bars, chopped (or Heath or Skor bars)
- 20 chocolate-covered Digestive biscuits
Instructions
- In a large bowl, whip the double cream with the sweetened condensed milk, espresso, and coffee and vanilla extracts. Whip just until soft peaks form. Be careful not to over-beat; we are aiming for a fluffy, not stiff, consistency.
- Gently fold in the chopped Daim bars using a spatula, distributing them evenly throughout the ice cream mixture.
- Scrape the mixture into a freezer-safe container. Cover it tightly with a lid or foil to prevent ice crystals from forming. Freeze overnight, or for a minimum of 7 hours, until firm.
- Approximately 30 minutes before you plan to assemble the ice cream sandwiches, place the Digestive biscuits in the freezer to allow them to firm up. This prevents them from breaking during assembly.
- To assemble, scoop about 1/4 cup of the frozen ice cream onto one chilled Digestive biscuit. Top with another biscuit and gently press down. Use a spoon or spatula to smooth the sides of the ice cream for a neat finish. Repeat with the remaining biscuits and ice cream.
- Place the assembled ice cream sandwiches back into the freezer until they are fully firm. If storing for an extended period, place a piece of parchment paper between each sandwich to prevent sticking.
