Ingredients

  • 6-8 (1kg / 2lb) skinless boneless chicken thighs
  • 1 tbsp olive oil

For the chicken seasoning rub

  • 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder

For the rice

  • 1 onion
  • 3 cloves garlic
  • 270g / 1 ½ cups rice, basmati or long grain
  • 1 1/2 tsp salt
  • 700ml / 3 cups chicken stock or water
  • 100ml / 1/2 cup tomato passata or crushed tomatoes in the US
  • 400g / 1 ⅓ cup canned black beans, drained
  • 1 tsp chipotle paste
  • 2 tsp cumin
  • 1 tsp dried coriander
  • 1/2 tsp dried oregano
  • 1/2 cup chopped canned green chillies , optional
  • 1 tbsp fresh cilantro (coriander) , for garnish
  • 1 tbsp fresh green onions, sliced for garnish
  • 1 lime, cut into wedges for serving

Instructions

  • Preheat the oven to 350F/180C. Prepare the seasoning rub by combining the salt, cumin, chili powder, and garlic powder in a small bowl. Generously season the chicken thighs with this rub. In a large, oven-safe pan or Dutch oven, heat the olive oil over high heat. Brown the seasoned chicken thighs on both sides until beautifully golden, but not cooked all the way through. Remove the chicken to a plate and set aside.
  • Reduce the heat to low. Add the chopped onion to the same pan and cook for about 5 minutes until softened. Stir in the minced garlic, dried coriander, cumin, oregano, and chipotle paste. Cook for another minute, continuously scraping the bottom of the pan to loosen any flavorful bits, stirring constantly to prevent burning.
  • Add the uncooked rice to the pan and stir for 1 minute, coating the grains in the aromatic mixture. Pour in the chicken stock, add the salt, tomato passata (or crushed tomatoes), chopped canned green chilies (if using), and drained black beans. Stir everything to combine well. Increase the heat and bring the mixture to a boil, then immediately remove the pan from the heat.
  • Nestle the browned chicken thighs back into the rice mixture, pouring in any accumulated juices from the plate. Cover the pan tightly with a lid and transfer it to the preheated oven. Bake for 20 minutes. After 20 minutes, remove the lid and continue to bake for an additional 10-15 minutes, or until the rice is fully cooked, tender, and all the liquid has been absorbed. Serve hot, garnished with fresh cilantro and sliced green onions, with lime wedges on the side for squeezing over the rice to add a bright, fresh finish.

Notes

  • While I prefer skin-on, bone-in chicken thighs for their flavor and juiciness, skinless and boneless chicken thighs are also an excellent choice. If you prefer chicken breasts, they can be used, but keep an eye on them to prevent overcooking as they tend to dry out more easily.
  • Both long-grain white rice and basmati rice work beautifully in this recipe, so use whichever you have on hand.
