Roasted Butternut Squash Pasta with Pistachios

Ingredients

  • 1 butternut squash
  • 2 tbsp olive oil, divided
  • 1 tsp salt
  • 1 shallot
  • 2 cloves garlic, minced
  • 375ml / 1½ cups vegetable stock
  • 2 tbsp nutritional yeast flakes
  • 2 tbsp pistachios, chopped and toasted
  • 500g / 1lb spaghetti, or other pasta
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 200C/400F. Cut the squash into 5cm / 2 inch pieces, discard the seeds. Arrange the squash on a roasting pan and sprinkle with 1 tbsp of olive oil or spray with a cooking spray, then season with a pinch of salt. Roast for 1 hour until very soft and slightly golden on the outside. Remove from the oven and let it cool slightly.
  2. While the squash cools, set a large pot of water to boil. Once boiled, add a generous pinch of salt and the spaghetti. Cook according to package instructions until al dente.
  3. While the pasta cooks, chop the shallot. In a pan, cook the shallot in the remaining tablespoon of olive oil for 3-4 minutes over low heat until softened. Add the minced garlic and cook for a few seconds longer until fragrant. Remove from the heat.
  4. Once the roasted butternut squash is cool enough to handle, peel off the skin. Add the cooked squash flesh to a blender along with the vegetable stock, sautéed shallot and garlic mixture, and nutritional yeast. Blend until the sauce is completely smooth and creamy. Return the sauce to the pan where you cooked the shallots.
  5. Drain the spaghetti, making sure to reserve about 125ml (1/2 cup) of the pasta cooking water. Add the drained spaghetti directly to the pan with the butternut squash sauce and toss well to coat every strand. If the sauce appears too thick, gradually add a little bit of the reserved pasta water until the sauce reaches your desired creamy consistency. Serve immediately, garnished with the toasted pistachio crumb and freshly ground black pepper to taste.
