Designated cocktail mixers and mezcal fans, this one’s for you. This seductively smoky mezcal paloma is a long, refreshing drink with a quick shortcut recipe. It’s fizzy, grapefruit-forward, and carries that unmistakable smoky mezcal character—perfect for hosts who don’t want to be stuck at the bar all night.

If you’re loyal to margaritas, consider my blood orange or passion fruit variations instead.

Summer gatherings call for long, low-effort cocktails that keep the good times going. I love a drink that’s easy to make yet tastes like you spent time on it—enter the paloma. With roughly two parts spirit to four parts juice and soda, it’s long enough to sip slowly through an evening. My version uses a simple shortcut that saves time behind the bar so you can spend more time with guests.

The shortcut is grapefruit soda. Traditional recipes ask for fresh grapefruit juice, soda water and simple syrup; using a quality grapefruit soda gives you bright citrus, fizz and sweetness in one step. It’s a perfectly reasonable swap when you want speed without sacrificing flavor.

Smoky paloma

When you hear “smoky cocktail,” wintery whiskies or fireside toddies might spring to mind. A smoky paloma, though, is pure summertime. This riff on the classic swaps tequila for mezcal to deliver an earthy, charred complexity that pairs surprisingly well with grapefruit.

Mezcal, like tequila, comes from the Mexican agave plant. Unlike tequila—which is typically produced from blue agave and steamed—mezcal can be made from a variety of agave species whose hearts (piñas) are traditionally roasted in earthen pits. That process imparts robust smoky, woody and sometimes leathery notes that stand up well to bright citrus sodas.

The combination works: the mildly bitter, sparkling grapefruit soda refreshes, while the mezcal provides a warm, smoky counterpoint. Add a squeeze of lime and a splash of grenadine if you like a hint of ruby sweetness, and you’ve got a drink that’s both easy and elegant.

Important recipe tips and notes

  • Serve cold. Use large ice cubes so the drink stays chilled without diluting too quickly.
  • To make the paloma less boozy, reduce the mezcal or increase the grapefruit soda.
  • Stir gently to preserve the carbonation; vigorous stirring or shaking will flatten the soda.
  • Grenadine is a concentrated pomegranate syrup that adds color and sweetness—use it to taste.
  • If your grapefruit soda is already rosy or sweet, you can skip the grenadine altogether.

Serving suggestions

A cocktail should look as good as it tastes. Small details elevate the experience:

  • Choose a tall, elegant glass for a paloma—its form complements a long drink.
  • Use clear, well-shaped ice blocks rather than crushed or cloudy ice for a cleaner appearance.
  • Rim the glass with a chili-lime seasoning for a spicy contrast, or simply use fine salt—both work well with mezcal and grapefruit.
  • Garnish with a thick semi-circle of grapefruit perched on the rim for a classic, photogenic finish.

Slip on your sunglasses, pose with the glass, and enjoy—or share a photo with friends.

This seductively smoky mezcal paloma is fizzy, grapefruit-forward, and has that unmistakable flamey mezcal flavour.

Ingredients

  • 50ml / 2 oz mezcal
  • 1/4 lime
  • Grapefruit soda (I used San Pellegrino) — enough to fill the glass
  • 1/2–1 tbsp grenadine (optional; omit if using a pink grapefruit soda)
  • Tajin Clasico seasoning with lime or fine salt to rim the glass
  • Grapefruit slice, for garnish

Instructions

  • Rub the rim of a tall glass with a lime or grapefruit wedge, then dip it in the chili-lime seasoning or salt until evenly coated.
  • Fill the glass with ice, pour in the mezcal, and squeeze in the remaining lime wedge. Drop the wedge into the glass or press it toward the bottom for extra acidity.
  • If using grenadine, add 1/2–1 tablespoon. Top with grapefruit soda and stir gently to combine without losing too much fizz. Garnish with a thick grapefruit slice and serve immediately.
