The Genius of Skillet Chicken Lasagna: A Weeknight Game Changer
Traditional lasagna recipes, while undeniably delicious, are often synonymous with long hours in the kitchen, a multitude of ingredients, and an intimidating stack of dishes. They are, for many, a labor of love, reserved for special occasions when an entire afternoon can be dedicated to culinary artistry. And for those moments, they are absolutely worth it!
However, what about the everyday? The busy weeknights, the spontaneous cravings for comfort food, or simply the desire for a homemade meal without the marathon prep? That’s precisely where our Skillet Chicken Lasagna steps in, redefining what a lasagna can be. This recipe is an unapologetic cheat’s version, designed to simplify your cooking experience without compromising on flavor. Let’s break down how this one-pan marvel tackles the usual challenges of classic lasagna:
Time-Saving: From Hours to Minutes
While a classic layered lasagna might demand upwards of 4.5 hours from start to finish, this easy skillet lasagna recipe laughs in the face of such time commitments. With a mere 30 minutes from prep to plate, it’s the ultimate solution for those evenings when time is a luxury you simply don’t have. Imagine enjoying a hearty, homemade lasagna without the agonizing wait – it’s no longer a dream!
Simplicity in Every Step: No More Complex Layers
A typical lasagna often involves a rich, soffritto-based Bolognese sauce and a velvety, labor-intensive béchamel – which means at least two separate pans and constant stirring. Our Skillet Chicken Lasagna strips away this complexity. Instead, it ingeniously combines ready-made basil pesto, flavorful chicken stock, and creamy heavy cream to create a luscious sauce. This streamlined approach eliminates tedious layering and demanding stirring, making the process incredibly straightforward for even novice cooks.
Minimal Ingredients, Maximum Flavor
Traditional lasagna can feature a lengthy ingredient list, especially with a complex meat sauce. This simplified chicken lasagna drastically cuts down on what you need, focusing on a few key components that deliver big on taste. At its heart are tender chicken breasts, aromatic garlic, and the bright, herbaceous notes of basil pesto. This replaces the need for an elaborate beefy Bolognese, while an easy mix of cream and cheese effortlessly substitutes béchamel. To add a pop of color and extra nutrients, fresh spinach and basil leaves are folded into the mix, alongside the strategically deconstructed lasagna sheets. It’s flavor-packed simplicity at its best.
Effortless Cleanup: The One-Pan Promise
The biggest perk? The clue is right there in the name: “Skillet Lasagna.” This entire meal, from start to finish, is prepared and cooked in just one trusty pan. Forget the mountain of pots, pans, and baking dishes that usually accompany a lasagna feast. This singular pan approach is truly the unsung hero for anyone tackling kitchen cleanup. It transforms the post-meal chore into a quick wipe-down, freeing up your valuable time for what truly matters.
Indeed, these two lasagna styles are worlds apart, sharing only the fundamental element of lasagna sheets. It might not be a fair comparison in terms of traditional complexity, but when you’re craving a quick, fuss-free, and satisfying pasta dish that’s beef-free and bursts with creamy pesto flavor, this white chicken skillet lasagna is your undeniable culinary champion!

Essential Recipe Tips and Notes for Perfect Skillet Lasagna
Achieving a restaurant-quality meal with the simplicity of a one-pan dish is easier than you think. Here are some key tips and notes to ensure your White Chicken Skillet Lasagna with Basil Pesto turns out perfectly every time:
- Embrace the Skillet Philosophy: While this dish contains lasagna sheets, it’s not meant to be an exact layered replica of traditional lasagna. Its charm lies in its speedy preparation and the way flavors meld together in one pan. It offers the same comforting satisfaction as a more involved white chicken lasagna or a hearty beef lasagna, but with a fraction of the effort.
- The Power of Pesto: Basil pesto is the secret weapon for imparting huge flavor quickly. Its rich, aromatic profile and smooth texture instantly elevate the dish. For ultimate convenience, use a high-quality store-bought pesto. If you’re feeling adventurous and have a few extra minutes, try making your own with this fantastic basil pesto recipe – the fresh flavor is unparalleled!
- Ricotta-Free Zone (Mostly): Many classic American lasagna recipes call for ricotta. However, with the generous amounts of heavy cream, savory Parmesan, and gooey mozzarella in this recipe, we find that added ricotta is simply unnecessary. The dish already achieves a wonderfully rich and creamy consistency.
- Cheese Lover’s Option: If you’re a true cheese enthusiast and believe there’s no such thing as too much cheese, feel free to add a layer of ricotta. Simply daub some over the top of the skillet lasagna before layering on the mozzarella for an extra dimension of creaminess.
- The Post-Bake Rest: Don’t be alarmed if your skillet lasagna appears a bit wet or soupy when it first comes out of the oven. This is completely normal! Allow it to stand for at least 10 minutes before serving. During this resting period, the pasta will continue to absorb the excess liquid, resulting in a perfectly creamy, well-set dish.
- Achieving Golden Perfection: For that irresistible, bubbly, golden-brown cheese topping with slightly crispy, “just-burnt” edges, finish your skillet lasagna under the broiler (grill). Keep a close eye on it, as broilers can vary in intensity, and cheese can burn quickly.
- Stovetop Melting Alternative: If you prefer to avoid turning on the oven or using the broiler, you can melt the mozzarella topping right on the stovetop. After adding the mozzarella, simply cover the skillet with a lid and let it simmer over low heat until the cheese is beautifully melted and gooey. For the best results with this method, ensure your mozzarella is sliced thinly.

Elevate Your Meal: Delicious Serving Suggestions
While our White Chicken Skillet Lasagna with Basil Pesto is a complete meal in itself, pairing it with the right side dishes can transform your dinner into an extraordinary culinary experience. Given that you’re already at the stove and potentially have the oven heated, you have a wealth of options for complementary sides:
Stovetop Sides for Convenience:
- Lemon Butter Green Beans: This is a personal favorite. The vibrant citrus notes of the lemon beautifully cut through the richness of the creamy lasagna, while the tender-crisp texture of the green beans provides a refreshing contrast. The tang of Parmesan in the main dish is perfectly complemented by this bright side. Find the recipe for lemon butter green beans here.
- Pan-Fried Zucchini with Basil and Pecorino: If you have any leftover fresh basil leaves from your lasagna, this is the ideal way to use them up. Sautéed zucchini becomes tender and sweet, enhanced by the aromatic basil and salty Pecorino cheese, echoing the flavors of the main course. Try our pan-fried zucchini recipe.
- Pan-Fried Garlic Mushrooms: It’s almost impossible for me to serve a chicken breast recipe without including mushrooms somewhere! Pan-fried garlic mushrooms add an earthy depth and savory umami flavor that pairs incredibly well with the chicken and creamy pesto sauce. A classic and satisfying choice. Check out our pan-fried garlic mushrooms recipe.
Oven-Baked Sides for Maximum Flavor and Efficiency:
- Roasted Broccoli with Sun-Dried Tomatoes: If your oven is already on for the lasagna, make the most of it with this robust side. Roasted broccoli florets develop a delightful crispness, while sun-dried tomatoes offer a sweet and chewy counterpoint. An extra sprinkle of Parmesan ties it all together beautifully. Discover our roasted broccoli with sun-dried tomatoes recipe.
- Roasted Summer Vegetable Salad with Nuts and Seeds: For a burst of color, texture, and nutrition, consider a roasted summer vegetable salad. Roasting brings out the natural sweetness of vegetables, and a sprinkle of crunchy nuts and seeds adds a delightful textural element to your plate, making for a well-rounded meal. Find the recipe for roasted summer vegetable salad here.
And of course, if there’s one thing almost any lasagna recipe can agree on, it’s the timeless pairing of crispy, garlicky bread! Our air fryer garlic bread offers a quick and perfect accompaniment to soak up every last drop of that creamy pesto sauce.
Storage and Leftovers: Maximizing Your Meal’s Life
While many types of lasagna freeze beautifully, our Skillet Chicken Lasagna, with its rich cream base rather than a traditional béchamel, behaves differently when frozen and thawed. Cream-based sauces tend to develop a grainy or separated texture after freezing, which can be unappetizing. Therefore, this particular recipe is not recommended for freezing.
However, you can certainly enjoy any post-meal leftovers for several days! Simply transfer the cooled lasagna into an airtight container and store it in the refrigerator for 3-4 days. When you’re ready to reheat, you have a couple of options: gently warm it in the oven, covered, to prevent drying out, or use a microwave for a quicker solution. Be sure to heat thoroughly until piping hot.

White Chicken Skillet Lasagna with Basil Pesto
By Julia Frey of Vikalinka
Prep Time: 5 mins
Cook Time: 30 mins
Total Time: 35 mins
Servings: 6 people
Ready in 30 minutes, this skillet lasagna uses cupboard staples and is cooked in one pan, containing the family favorite: chicken breast.
Ingredients
- 1 tbsp olive oil
- 500g / 1 lbs chicken breasts, cut into bite-sized pieces
- 2 cloves garlic, minced
- 190g / 3/4 cup jarred or homemade basil pesto
- 500ml / 2 cups chicken stock
- 125g / 1/2 cup single / heavy cream
- 50g / 1/2 cup Parmesan cheese
- 100g / 3¼ cups spinach
- 8-9 lasagna sheets, broken into pieces
- 250g / 8 oz fresh mozzarella balls, sliced
- 3 tbsp grated Parmesan
- 2-3 basil leaves, for garnish
Instructions
- In a large skillet or pan, heat the olive oil over medium heat. Add the chicken breasts, seasoned with salt, and cook for about 5 minutes until lightly browned. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Next, add the basil pesto, chicken stock, heavy cream, and the 50g Parmesan cheese to the pan. Stir well to combine all ingredients, allowing the cheese to melt and fully incorporate into the creamy sauce.
- Stir in the fresh spinach until it begins to wilt. Then, add the broken lasagna sheets to the pan. Gently push the pasta pieces down with a spatula to ensure they are fully submerged in the liquid. Cook uncovered for 8-9 minutes over medium heat, stirring occasionally to prevent the lasagna sheets from sticking together.
- Once the pasta is al dente (tender with a slight bite), arrange the sliced fresh mozzarella over the top of the lasagna, followed by the remaining 3 tbsp of grated Parmesan. If desired, place the skillet under a broiler (grill) for 2 minutes, or until the cheese is beautifully melted and bubbly with golden edges. Remove from the oven and let it rest for about 10 minutes; this crucial resting time allows the pasta to absorb any remaining excess liquid, creating a perfect consistency. Garnish with fresh basil leaves and serve immediately.
