Why Farro Deserves a Place in Your Kitchen
While quinoa has enjoyed widespread popularity, it’s time to shine a spotlight on Farro, an ancient grain that offers a distinct and equally appealing profile. I first encountered farro several years ago and was immediately captivated by its unique earthy flavor and satisfyingly chewy texture. It’s a fantastic alternative to rice or pasta and brings a wonderful depth to any dish it graces, especially salads.
Incorporating healthy grains into salads is one of my favorite ways to boost their nutritional value and make them more substantial. While quinoa remains a favorite, I often rotate through a variety of grains to keep things interesting and diverse. My kitchen repertoire includes exciting options like millet, buckwheat, lentils, beans, and of course, quinoa. These nutritious additions not only make salads incredibly filling but also load them with essential vitamins, minerals, and fiber, ensuring you stay energized and satisfied.

This Farro salad perfectly exemplifies the power of healthy grains. It has become a huge hit in our household, especially with my husband, Brad. Despite his usual preference for meat-centric meals, he’s been absolutely raving about this salad, happily taking it to work for lunch. For me, that’s a significant victory! It proves that a meatless meal can be incredibly satisfying and delicious, leaving you feeling full and delighted without the need for animal protein.

The Mediterranean Touch: What Goes into This Salad
Beyond the fantastic farro, this recipe draws its vibrant flavors from a selection of fresh, wholesome, and readily available ingredients. You’ll find familiar salad staples like juicy tomatoes and crisp onions, but with a delightful twist: instead of traditional cucumbers, we’re using tender zucchini ribbons. This simple swap elevates the salad, offering a delicate texture and an unexpectedly refreshing bite.
During the summer months, I particularly enjoy using small, new crop zucchini. When shaved thinly and eaten raw, they possess an incredible crunch and a wonderfully fresh taste. Some might assume raw zucchini is bland, and it certainly can be if not properly seasoned. However, when paired with a well-crafted vinaigrette, these ribbons transform into an absolutely delicious component, absorbing the dressing’s flavors beautifully. The subtle sweetness of the cherry tomatoes, the briny depth of Kalamata olives, and the piquant kick of capers complete this Mediterranean medley, creating a truly irresistible salad that’s both light and fulfilling.

Crafting the Perfect Vinaigrette: The Heart of the Salad
A truly exceptional salad hinges on its dressing, and for this Farro salad, a classic French Vinaigrette is the ideal choice. The slightly nutty and earthy notes of farro really benefit from a touch of acidity, which awakens the grain and ties all the flavors together. While “French Vinaigrette” might sound sophisticated, its preparation is wonderfully simple and accessible to even the most novice cook.
Forget store-bought bottles filled with unnecessary additives and preservatives! Making your own vinaigrette is incredibly easy. All you need is a good quality olive oil, white wine vinegar, a spoonful of Dijon mustard (which acts as an emulsifier and adds a subtle tang), a tiny amount of minced garlic, and, of course, salt and freshly ground black pepper to taste. Whisk these ingredients together vigorously, or simply shake them well in a jar, until they are beautifully emulsified. The result is a dressing that’s miles ahead in flavor compared to anything you can buy.
I stopped purchasing bottled dressings years ago. When I first moved to the UK, I struggled to find the specific dressings I was accustomed to, which prompted me to start experimenting with homemade versions. What I quickly discovered was a revelation: salads dressed with homemade vinaigrettes taste infinitely better. They’re also far more economical, and you have complete control over the ingredients, ensuring they are healthier and free from artificial flavors or excessive sugar.
I often prepare a larger batch of this versatile vinaigrette, doubling or even tripling the recipe, and storing it in a clean jam jar in the fridge. It keeps beautifully for about a week, allowing me to enjoy fresh, flavorful salads all week long. Sometimes, I’ll even vary the herbs, adding fresh dill, parsley, or oregano to create new flavor dimensions.

Customizing Your Farro Salad: Endless Possibilities
One of the greatest joys of this Mediterranean Farro salad is its incredible adaptability. The combination of vegetables and other additions is truly limitless, making it easy to tailor to your personal preferences or whatever fresh produce you have on hand. Feel free to unleash your creativity!
Consider adding crunchy bell peppers for a burst of color and sweetness, refreshing cucumbers (if you prefer them over zucchini or in addition to them), peppery radishes for a sharp bite, or crisp sugar snap peas for a delightful crunch. Literally, anything your heart desires can find a happy home in this versatile salad! For those who love a creamy, salty counterpoint, a generous crumble of feta cheese is an absolutely excellent addition, harmonizing beautifully with the Mediterranean flavors. You could also toss in some grilled chicken or salmon for added protein, or even some toasted nuts for extra crunch.
