A hearty and flavourful Russian potato salad, also known as Salad Olivier, is a welcome addition to any celebration!

Ingredients

For the Potato Salad Dressing

  • 1/2 cup / 125ml mayonnaise
  • 1 tbsp white wine vinegar
  • 1½ tsp Dijon mustard
  • 1 tbsp water, to loosen the dressing to desired consistency
  • 1/4 tsp black pepper

For the Potato Salad

  • 4 medium waxy potatoes (e.g., red potatoes, Fingerling, Maris Piper, Charlotte, Yukon Gold), boiled and cooled
  • 6 hard-boiled eggs, peeled
  • 450g / 1 lb cooked chicken, shredded or diced (such as rotisserie, roast, or smoked chicken)
  • 4 dill pickles (not sweet, Polish gherkins in UK), finely diced
  • 3-4 green onions, chopped
  • 1/2 medium apple, finely diced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt, to taste

Instructions

For the Salad Dressing

  1. In a small bowl, combine mayonnaise, white wine vinegar, Dijon mustard, water, and black pepper. Whisk until all ingredients are well blended and smooth. Add a touch more water if a looser consistency is desired.
