Velvet Butter Salmon Curry

Experience the delightful fusion of classic Indian flavors with a refreshing seafood twist in our Butter Salmon Curry. This dish takes the beloved creamy, spiced base of traditional butter chicken and marries it perfectly with tender, flaky salmon. Marinated in a rich blend of tandoori spices and thick yogurt, the salmon absorbs exotic flavors before being gently simmered in a luxurious, velvety heavy cream sauce. It’s an irresistible culinary adventure that promises both comfort and excitement for your taste buds.

For many home cooks, the thought of preparing an authentic Indian curry can seem daunting, but this recipe for Butter Salmon Curry proves that it can be both achievable and incredibly rewarding. The secret lies in a foundational technique borrowed from traditional Indian cooking: marinating the main ingredient in yogurt. While it adds a little preparation time, the profound impact on flavor and texture is immeasurable. You can anticipate succulent, juicy morsels of fish encased in a velvety sauce, bursting with fragrant spices. This method is famously employed in dishes like Chicken Tikka Masala, a dish so rich in flavor that I often enhance mine with chickpeas for an extra boost of fiber and protein, making it even more satisfying.

Curry holds a special place in the hearts of many, particularly in the UK, where it’s often celebrated as ‘the nation’s favorite dish.’ Since my family and I moved here, we have eagerly embraced the vibrant world of Indian cuisine. The sheer diversity of styles, ingredients, and varying degrees of heat ensures there’s a curry recipe to captivate every palate. From the hearty, thick-gravied meat and potato curries prevalent in the North, to the lighter, coconut and vegetable-centric stews of the South, Indian cuisine offers a delightful journey of flavors you can embark on right from your own kitchen.

Among the myriad of Indian dishes, Butter Chicken Curry has long been a cherished family favorite. Our introduction to this iconic dish began with our local Indian takeaway, and it quickly became the first curry I successfully persuaded my young children to try. Its genius lies in the exquisite balance of warm, aromatic spices—cumin, garam masala, coriander, and paprika—expertly mellowed by the inclusion of both yogurt and cream. This combination created a gentle, child-friendly introduction to the complex flavors of Indian cooking, and before long, we were eagerly ordering two portions with every meal!

However, indulging in weekly Indian takeaways can quickly become an expensive habit, not to mention the potential impact on your health. Determined to replicate the magic at home, I embarked on a culinary quest. After some experimentation and invaluable advice from a knowledgeable friend, I successfully recreated the authentic taste of butter chicken curry right in my own kitchen, a triumph that transformed our dining routine.

Homemade Curry with a Salmon Twist: A Delicious Evolution

As much as we adored our homemade butter chicken, after fifteen years of enjoying the same dish, a sense of culinary curiosity began to stir. I found myself wondering if the rich, creamy butter curry base could gracefully accommodate a different protein. With some fresh salmon readily available, I decided to take a delicious risk. This wasn’t merely about swapping ingredients; it was about reimagining a classic and discovering new depths of flavor.

One of the most remarkable advantages of using fish, particularly salmon, in this curry recipe is its incredibly quick marination time. While I recommend allowing at least an hour for the salmon to absorb the flavors, you can certainly get away with as little as 30 minutes if you’re pressed for time. The lactic acid in the yogurt works wonders, tenderizing the salmon flesh and locking in moisture, ensuring each piece remains succulent and flaky. This marinating process also forms a protective layer around the fish, preventing it from drying out or sticking when it’s first introduced to the hot pan for searing, leading to perfectly cooked results every time.

While salmon may not be the most traditional protein associated with Indian curries, its natural richness and healthy fat content make it an exceptional choice for this butter curry. The salmon’s inherent oils infuse the sauce, creating an even more unctuous, luxurious, and deeply satisfying experience than its poultry counterpart. It’s a sophisticated twist that elevates the dish to new heights of indulgence.

The marinade itself is the heart of the dish, providing the foundational spice profile. Sticking to my friend’s sage advice, I opted for a convenient and reliable tandoori masala spice mix, the very same one used in my original butter chicken recipe. This isn’t a shortcut; it’s a smart culinary hack that delivers consistent, authentic flavor without the need to blend individual spices from scratch. But the aromatic journey doesn’t stop there. Fresh garlic and ginger, along with ground coriander and turmeric, complete this vibrant spice medley, transforming the dish into a truly flavor-packed delight. These aromatic foundations are first gently fried with finely chopped onion, building a fragrant base. A touch of tomato paste is then added, providing a subtle tanginess and depth, followed by the remaining yogurt-based marinade. This careful layering of ingredients ensures a complex and harmonious flavor profile that is both comforting and exhilarating.

Once the base ingredients have simmered to perfection, allowing their flavors to meld beautifully, the seared salmon pieces and a generous pour of double (heavy) cream are introduced. This final cooking stage is quick, typically just five minutes, ensuring the salmon remains tender and perfectly cooked, and the cream integrates seamlessly into the rich sauce. The dish is then ready to be served hot, traditionally with fluffy rice and a generous sprinkle of fresh cilantro (coriander) for a burst of vibrant freshness. If you’ve had the pleasure of trying both butter chicken and this butter salmon recipe, I’d be genuinely interested to hear your thoughts on how they compare!

Expert Recipe Tips and Notes for Perfect Butter Salmon Curry

  • Familiar Flavors: Drawing inspiration directly from classic butter chicken curry, this fish curry recipe will feel comfortingly familiar, making it an easy transition for fans of the original.
  • Tandoori Masala Mix: The primary spice element in this curry is a tandoori masala spice mix. Don’t hesitate to use a convenient pre-packaged blend; it’s a legitimate hack that saves time without compromising on authentic flavor.
  • Sourcing Spices: This versatile spice blend is typically available in most major supermarkets. However, if you’re struggling to find it locally, a quick online search will provide numerous options.
  • Fish Alternatives: While salmon is exceptional, this butter curry recipe is forgiving and works beautifully with various thick-fleshed fish fillets. Excellent alternatives include cod, unsmoked haddock, hake, or the more economical pollock. Experiment to find your favorite!
  • Full-Fat Yogurt is Key: For the best results and a smooth, split-free sauce, I highly recommend using full-fat natural yogurt. Low-fat varieties are far more susceptible to splitting when heated, which can affect the texture of your curry.
  • Skinless Salmon Advantage: Opt for skinless salmon fillets if possible. This saves you the fiddly and time-consuming step of skinning them at home, streamlining your preparation.
  • Mind the Cooking Time: Salmon cooks rapidly, so vigilance is key. Be careful not to overcook the fish; it should remain tender and flaky, not dry.
  • Taste Before Salting: Many pre-made tandoori masala spice mixes already contain salt. Always taste your curry before adding additional salt to avoid over-seasoning.
  • Garnish for Freshness: A generous sprinkle of fresh cilantro (coriander) at the end not only adds a beautiful pop of color but also a burst of fresh, aromatic flavor that perfectly complements the rich sauce.
  • Adjusting Spice Levels: If you prefer a spicier curry, consider adding a pinch of cayenne pepper or a finely chopped green chili during the sautéing of the aromatics. For a milder version, ensure you use a tandoori masala mix that isn’t overly hot.

Elevate Your Meal: Perfect Serving Suggestions for Butter Salmon Curry

My culinary horizons were recently broadened by a friend in Manchester, UK, who introduced me to the ingenious “rice-and-three” restaurant concept. This delightful tradition, specific to the North West and inspired by the traditional Indian thali, involves a meal consisting of a generous portion of rice accompanied by three different curries, typically served in bustling canteen-style establishments across the city. For someone like me, who often struggles to pick just one dish from a tempting menu, or settle on a single curry to cook at home, this concept is an absolute dream come true!

While I rarely have the chance to venture North and indulge in an authentic rice-and-three experience, I satisfy this culinary fantasy by creating my own diverse spread of homemade curry recipes. Here’s how I typically envision serving this Butter Salmon Curry, turning it into a truly magnificent feast:

  • The Rice Base: Start with a foundation of perfectly cooked plain basmati rice, known for its fragrant aroma and fluffy texture. For a subtle South Indian flourish and added richness, consider fragrant coconut rice.
  • Curry 1 – The Star: Of course, our glorious Butter Salmon Curry takes center stage! However, if you’re looking to offer an additional meat option or fancy a change, a rich and hearty Chicken Rogan Josh, with its fruity and smoky undertones, makes an excellent alternative or companion.
  • Curry 2 – The Legume Delight: To complement the richness, a simple and wonderfully digestible Red Lentil Daal is a perfect choice, offering a comforting, earthy balance. Alternatively, for something a bit more decadent and creamy, Daal Makhani, made with black lentils, provides a luxurious, rich texture.
  • Curry 3 – The Vibrant Vegetable: To round out the meal and ensure a balanced plate, a vegetable-packed curry is essential. Saag Paneer (spinach and soft white cheese) offers a creamy, leafy green contrast, while Aloo Gobi (potato and cauliflower) provides satisfying texture and earthy flavors.
  • Beyond the Curries: Don’t forget the accompaniments! Warm naan bread, perfect for scooping up every last drop of sauce, is a must. A cooling raita (yogurt with cucumber and mint) can cut through the richness, while a vibrant mango chutney or a simple mixed pickle adds bursts of sweet and sour flavor.
  • A Refreshing Drink: Pair your curry feast with a glass of crisp, cold water or a traditional Indian beverage like a mango lassi to cleanse the palate.

Alright, so my “rice and three” quickly turns into rice and SIX! But what can I say? I told you I could never pick just one!

Storage and Leftovers: Maximizing Your Butter Salmon Curry Enjoyment

This exquisite Butter Salmon Curry makes for delightful leftovers, allowing you to savor its flavors for another day. You can safely store any remaining curry in an airtight container in the fridge for up to 3 days. When you’re ready to enjoy it again, gently reheat it on the stove top over a low heat. If the sauce appears a little too thick after refrigeration, simply add a splash of water or a tiny bit more cream to loosen it to your desired consistency. Always ensure it’s heated thoroughly before serving.

Unfortunately, due to the high content of cream and yogurt, this homemade salmon curry is not ideal for freezing. Dairy-based sauces tend to separate and become grainy upon thawing and reheating, significantly affecting the creamy texture that is so central to this dish. It’s best enjoyed fresh or within a few days of preparation.

Butter salmon curry uses classic tandoori spices with marinated tender salmon pieces before being simmered in luxurious heavy cream.

Ingredients

  • 450g / 1 lbs salmon fillets, skin off
  • 4 tbsp tandoori masala spice mix
  • 250ml / 1 cup full fat natural yogurt, plain
  • 2 tbsp butter, or ghee
  • 1 medium onion, chopped
  • 3 cloves garlic, minced or 1 tbsp garlic paste
  • 1 tbsp ginger paste, or fresh grated ginger
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 2 tbsp tomato paste
  • 175ml / 3/4 cup water
  • 125ml / 1/2 cup double / heavy cream
  • 1 tbsp fresh cilantro, chopped

Instructions

  1. Remove the skin from the salmon fillet and cut it into bite-sized pieces. In a medium bowl, mix the yogurt and the tandoori spice masala. Add the salmon pieces and gently stir to ensure they are fully coated in the marinade. Refrigerate for at least 30 minutes, or ideally 1 hour, for best flavor.
  2. In a large pan, heat 1 tablespoon of butter or ghee over medium-high heat. Add the marinated salmon pieces (reserving the remaining marinade in the bowl). Cook the fish for about 5 minutes, turning occasionally, until sealed and lightly browned on all sides but not cooked all the way through. Remove the salmon to a separate plate and set aside.
  3. Using the same pan, add the remaining butter or ghee. Reduce the heat to low and add the chopped onion, ginger, and garlic. Sauté gently for about 10 minutes until the onion is softened and translucent. Stir in the ground coriander, turmeric, and tomato paste, mixing well. Deglaze the pan with water, scraping up any browned bits from the bottom. Add the reserved yogurt marinade to the pan and stir one more time. Increase the heat to medium and bring the mixture to a simmer. Reduce the heat again to low and continue simmering for 5 minutes, allowing the flavors to meld.
  4. Pour in the double (heavy) cream and stir to combine. Gently return the partially cooked salmon pieces to the pan. Cook for another 5-7 minutes, or until the salmon is cooked through and flaky, being careful not to overcook it. Taste the curry and add salt if needed, keeping in mind that most tandoori masala mixes already contain salt.
  5. Serve your Butter Salmon Curry immediately with fluffy basmati rice, warm naan bread, and a generous sprinkle of fresh chopped cilantro for garnish. Enjoy!

Notes

  • Tandoori masala spice mix should be readily available in most supermarkets, but can also be found online.
  • Other thick-fleshed fillet of fish will work in place of salmon in this recipe. This includes cod, unsmoked haddock, hake or pollock.
  • Use full fat yogurt for this recipe as low fat is more likely to split when heated.
  • This curry cooks fast so be careful not to overcook the salmon.
