  • 250g / 1/2 lbs small pasta (such as trompetti, farfalle, or orzo)
  • 3 cloves garlic, unpeeled
  • 400g / 2 cups yellow cherry tomatoes, halved
  • 400g / 2 cups red cherry tomatoes, halved
  • 40g / 1/4 cup black olives, pitted and halved
  • 40g / 1/4 cup green olives, pitted and halved
  • 2 tbsp fresh chives, chopped
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • Optional: 1 ball fresh mozzarella, torn or cubed
  • For the Basil Vinaigrette:
  • 10g / 1/2 cup fresh basil leaves
  • 4 tbsp white wine vinegar, or fresh lemon juice, to taste
  • 7 tbsp extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Add the unpeeled garlic cloves to the boiling water during the last 5-7 minutes of the pasta’s cooking time.
  2. Once the pasta is cooked, drain it thoroughly. Remove the garlic cloves, peel them, and set aside for the vinaigrette. Rinse the pasta under cold water to cool it down and prevent it from sticking, then drain again and set aside.
  3. In a large mixing bowl, combine the cooled pasta, diced red and yellow bell peppers, halved red and yellow cherry tomatoes, pitted and halved black and green olives, and chopped fresh chives.
  4. To prepare the basil vinaigrette: In a food processor or blender, combine the fresh basil leaves, white wine vinegar (or lemon juice), and the peeled cooked garlic cloves.
