- 1 tbsp oil from sun-dried tomatoes jar
- 1 shallot, chopped
- 2 cloves garlic, minced
- 4-5 sun-dried tomatoes or sun-blushed tomatoes (a mix is recommended)
- 400g / 14 oz butter beans, drained (or cannellini beans)
- 1/2 tsp smoked paprika
- 1 tbsp apple cider vinegar
- 250ml / 1 cup vegetable stock
- 4 basil leaves, sliced (or 1/2 tsp dried basil)
- 125ml / 1/2 cup single / light cream
- 1/2 cup Parmesan cheese, freshly grated
- 30g / 1 cup fresh spinach
