Just last week, an intriguing invitation landed in my inbox: an opportunity to visit one of The Happy Egg Company’s free-range farms, nestled just outside Peterborough. The email concluded with a rather unique request: “Please let us know your shoe size, so we could sort out wellies; we will also provide coveralls for your visit.” This wasn’t your typical restaurant launch or cooking demonstration invitation. - 1 shallot, chopped
- 1 clove garlic, minced
- 4-5 mushrooms, sliced
- A splash of white wine
- 4 eggs
- Salt and pepper to taste
- 50 g/1/3 cup Comte cheese or your favourite cheese, grated
- 1 tsp truffle oil
- Fresh parsley or chives for garnish
Instructions
- Melt butter over low heat in a medium frying pan. Add chopped shallots and cook for 5 minutes until soft and translucent, but not browned. Incorporate minced garlic and sliced mushrooms, cooking for an additional 2-3 minutes. Then, add a splash of white wine, using it to scrape any browned bits from the bottom of the pan to deglaze and add flavour.
- Carefully crack the eggs directly into the frying pan, nestling them among the mushrooms and shallots. Sprinkle generously with the grated cheese. Cook over low heat for approximately 5 minutes, then cover the pan with a lid and allow the eggs to steam for an additional 2-3 minutes. Adjust this steaming time according to your preference for yolk firmness. Once cooked to your liking, drizzle with the aromatic truffle oil and garnish with freshly chopped parsley or chives.
