In the whirlwind of modern life, it’s easy to fall into the habit of relying on takeout meals. While an occasional treat, frequent takeaway dinners can be both costly and less than ideal for our health goals. We all crave that burst of diverse flavors and the convenience they offer, which is precisely why I’m passionate about recreating our restaurant favorites at home. This particular Thai chicken curry is a beloved rendition of the dish my daughter and I consistently order, now made even better and healthier!

My secret to making this dish so quick and stress-free? A fantastic store-bought Thai red curry paste. This clever shortcut drastically cuts down on prep time, allowing you to enjoy a complex, aromatic curry without the extensive effort of blending your own spice mix from scratch. It’s a game-changer for busy weeknights, delivering authentic Thai flavors in a fraction of the time.

Chicken Sweet Potato Curry: A Harmonious Blend of Flavors

Our local Thai restaurant offers two standout curries: one with chicken and potatoes, and another with chicken, green beans, and bamboo shoots. Inspired by these favorites, I decided to craft a homemade version that marries the best elements of both, while also adding a delightful twist. The inclusion of bamboo shoots, though perhaps less common in Western cooking, brings an incredible authentic crunch and a subtle, earthy flavor that truly elevates the dish. You can typically find canned bamboo shoots in the Asian foods aisle of most supermarkets, making them an accessible and rewarding addition to your curry.

In my rendition, I’ve replaced traditional potatoes with sweet potatoes, which are a phenomenal choice. Their natural sweetness beautifully contrasts and balances the savory, spicy notes of the red curry paste and rich coconut milk. Beyond their delicious flavor, sweet potatoes also pack a nutritional punch, adding a healthy boost of vitamins and fiber to your meal. This combination creates a deeply satisfying and wonderfully complex flavor profile that’s hard to resist. For those seeking a plant-based alternative, my Lentil and Sweet Potato Curry Recipe offers a similar comforting experience!

Embracing convenience without compromising on taste, this recipe leverages a high-quality store-bought curry paste. This choice allows the entire meal to come together in under 30 minutes, making it an ideal candidate for a quick yet impressive weeknight dinner. Forget the labor-intensive process of grinding spices; a delicious Thai curry is now within easy reach.

Mastering Your Thai Curry: Essential Tips and Variations

Crafting the perfect Thai curry is an art, and a few key considerations can elevate your dish from good to extraordinary. Here are some invaluable tips and versatile variations to help you customize this recipe to your liking:

  • Choosing Your Curry Paste: The quality of your store-bought curry paste profoundly impacts the final flavor. Not all brands are created equal, and some offer a more authentic and robust taste than others. Take a moment to research reputable brands or conduct a small taste test to find your preferred paste. This small effort will yield significant flavor dividends.
  • Coconut Milk Matters: For the richest, most authentic flavor and creamy texture, opt for full-fat coconut milk. The majority of the coconut flavor and luxurious mouthfeel comes from the thick, solid layer at the top of the can. While low-fat coconut milk can be used to reduce calories, be prepared for a noticeable reduction in flavor depth and creaminess. In my experience, the indulgence of full-fat is worth it for an exceptional curry.
  • Protein Power: This recipe is incredibly adaptable when it comes to protein. While chicken breasts are specified, skinless, boneless chicken thighs are an excellent alternative, offering a more tender and juicy result. Beyond chicken, feel free to experiment with fish, succulent shrimp, plump prawns, or even make it fully vegetarian with lentils or firm tofu. Each protein brings its unique texture and flavor, allowing for endless customization.
  • Vegetable Versatility: Don’t feel limited to the vegetables listed. Thai curries are wonderfully forgiving and embrace a wide array of produce. Asparagus, mushrooms, crisp snow peas, sugar snap peas, and colorful red and yellow bell peppers are all fantastic additions that complement the curry base beautifully. Use what you have on hand or what your family enjoys most for the best possible outcome.
  • Embrace Bamboo Shoots: If you haven’t tried bamboo shoots before, I highly encourage you to do so! Their unique crunch and subtle flavor are incredibly authentic to traditional Thai curries and add an exciting textural contrast that sets this dish apart.
  • Flavor Exploration: While this recipe focuses on red curry, the principles can be applied to other Thai curry pastes. Feel free to substitute green or yellow curry pastes for a different flavor profile. Each paste offers a distinct blend of herbs and spices, allowing you to explore the vast spectrum of Thai curry flavors.

Perfect Pairings: Serving Suggestions

This tantalizing Thai red curry, bursting with complex flavors, stands beautifully on its own. However, a simple bed of fluffy white rice, such as aromatic Jasmine rice, is all it needs to become a complete and immensely satisfying meal.

For those looking to elevate their rice game, there are plenty of delicious options. My personal go-to is fragrant coconut rice, which can be effortlessly prepared in an Instant Pot, adding another layer of creamy sweetness that perfectly complements the curry.

To enhance the presentation and add a burst of freshness, a sprinkle of fresh cilantro (or coriander) is a must. Its bright, herbaceous notes provide a wonderful contrast to the rich curry. A squeeze or two from a fresh lime wedge just before serving will introduce a zesty citrus kick that awakens all the flavors. For an added touch of elegance and flavor, consider garnishing with a few slivers of fresh red chili if you enjoy an extra bit of heat.

Should you wish to expand your meal further, this curry pairs wonderfully with a variety of side dishes. Shrimp, in particular, makes an exquisite accompaniment. My recommendations include sweet and savory Honey Garlic Shrimp or the crispy, addictive Salt and Pepper Shrimp, both of which complement the curry’s flavors without overpowering them.

Storage and Leftovers Made Easy

One of the many joys of cooking a flavorful curry is how beautifully it develops over time. Any leftover Thai Red Curry can be stored in an airtight container in the refrigerator for 3-4 days. In fact, many people find that the flavors meld and intensify overnight, making the curry even more delicious the next day. This makes it an excellent option for meal prepping throughout the week.

For longer storage, this curry freezes exceptionally well for up to 3 months. To freeze, ensure the curry is completely cooled before transferring it to freezer-safe containers. When you’re ready to enjoy it, simply let it thaw overnight in the refrigerator. Reheat gently on your stovetop over medium-low heat. If the curry seems too thick, you can add a splash of water or chicken broth to achieve your desired consistency. Always ensure that the chicken pieces are thoroughly heated to a food-safe temperature before serving, typically reaching an internal temperature of 165°F (74°C).

Thai red curry with chicken, sweet potatoes, green beans and bamboo shoots is full of flavour, healthy and so easy to make at home!

Ingredients

  • 180g / 2/3 cup Thai red curry paste
  • 400ml / 14 oz coconut milk
  • 2 chicken breasts
  • 2 sweet potatoes, medium
  • 110g / 1 cup green beans
  • 120g / 1/2 cup canned bamboo shoots
  • 1 tbsp fish sauce
  • 1/2 red chilli, optional
  • 1 tsp palm sugar, or brown sugar
  • coriander, to garnish

Instructions

  1. To the heated pan add the curry paste with 2 tbsp of the coconut milk, allow the curry to warm through on medium heat until the aroma is released, then pour in the rest of the coconut milk and bring to a simmer.
  2. Next add in the sweet potatoes, cut into large chunks, green beans, bamboo shoots and chicken breasts, cut into thin bite-sized pieces. Stir to combine and sprinkle the fish sauce all over together with the palm sugar or brown sugar, cut the red chilli in half and add to the curry, if using. (Use the chilli sparingly or omit if you are sensitive to spicy food.)
  3. Then bring the curry to a boil, lower the heat and let everything simmer for 15-20 minutes until the sweet potatoes are cooked all the way through but still holding their shape. Serve with rice.
