Discovering the Magic of Moroccan Spice
My love affair with Moroccan spice began, quite unexpectedly, twice! It seems I was so captivated by its rich aroma and complex flavor profile the first time that I simply had to re-discover it. Suddenly, I found myself with two jars of this incredible blend, brimming with inspiration and eager to explore its culinary possibilities.
Moroccan spice is more than just a seasoning; it’s a gateway to an entire culinary tradition. Typically, these blends are a harmonious mix of warm, earthy, and sometimes sweet notes, featuring staple ingredients like cumin, paprika, coriander, turmeric, ginger, and a hint of cayenne or black pepper. Sometimes, more exotic additions like cinnamon, cardamom, or cloves are included, creating a truly unique bouquet. The secret to unlocking its full potential often lies in grinding whole spices just before use. Crushing a handful in a mortar and pestle releases an intoxicating fragrance that fills the kitchen, promising a dish rich in depth and character.
This versatile spice blend is a cornerstone of North African cuisine, lending its distinctive taste to everything from hearty tagines to simple grilled meats and vegetables. It’s a flavor combination that truly deserves the spotlight, transforming everyday ingredients into something extraordinary. This particular couscous bowl recipe was born from that fascination, aiming to showcase the beautiful interplay of these vibrant spices with fresh, wholesome components.

The Art of Perfectly Roasted Vegetables
Roasting vegetables is a simple technique that yields incredible results, transforming humble produce into tender, caramelized, and intensely flavorful bites. In our home, roasted asparagus is a regular feature, and for good reason. The high heat of the oven brings out a nutty sweetness in the asparagus that steaming or boiling simply cannot achieve. A simple toss with fresh garlic, bright lemon zest, and a drizzle of good olive oil is all it takes to create a side dish that’s far greater than the sum of its parts. Once you experience the depth of flavor from roasted asparagus, you’ll find it hard to go back to any other method.
This couscous bowl elevates its vegetable component by including a colorful medley of red and yellow bell peppers, sweet shallots, aromatic garlic, and fresh zucchini. Each vegetable contributes its unique texture and flavor, creating a robust and satisfying foundation for the dish. Bell peppers soften and sweeten in the heat, offering a vibrant pop of color and Vitamin C. Zucchini becomes tender and slightly charred, while shallots add a delicate onion flavor without being overpowering. The aroma wafting from the oven as these vegetables roast is utterly captivating, making the wait for dinner almost unbearable!
It’s a common misconception that salads must be raw to be fresh. In reality, roasted vegetables open up a whole new world of salad possibilities. Their rich, savory notes provide a substantial base that can elevate a simple salad to gourmet heights. Imagine combining these warm, roasted veggies with a creamy dressing, like a Tahini Green Goddess dressing, and a sprinkle of fresh herbs – you end up with a dish that’s far more dynamic and satisfying than just a few green leaves. While these roasted vegetables are hearty enough to be a meal on their own, adding fluffy couscous transforms them into a truly complete and delicious culinary experience.

Succulent Moroccan-Spiced Chicken
For those who prefer a vegetarian option, rest assured that this couscous bowl, loaded with its fragrant roasted vegetables and fluffy grains, is incredibly satisfying on its own. It’s a complete and flavorful meal that caters beautifully to plant-based diets, offering a delightful blend of textures and spices without the need for meat.
However, if you’re a devoted carnivore like me, the addition of Moroccan-spiced chicken breasts takes this bowl to an extraordinary level. The magic truly happens in the marinade. Combining the complex notes of Moroccan spices with the creamy tang of Greek yogurt creates a marinade that not only infuses the chicken with incredible flavor but also tenderizes it beautifully. The active cultures in the yogurt help to break down the chicken fibers, resulting in incredibly juicy and succulent meat, regardless of your cooking method.

While an overnight marinade offers the deepest flavor penetration, even two hours in this simple two-ingredient mixture will yield delicious results. The beauty of these marinated chicken breasts is their versatility in cooking. You can bake them in the oven, pan-fry them to achieve a lovely golden crust, or even use an air fryer for a quick and healthy option. My personal preference, however, remains the grill. Grilling imparts a beautiful smoky char and keeps the chicken wonderfully moist. The high heat sears the exterior, locking in all those incredible Moroccan flavors.
Once cooked to perfection, slice the juicy, grilled chicken and arrange it artfully over the bed of fluffy couscous and vibrant roasted vegetables. A final flourish of the homemade Moroccan sauce, made with a portion of the reserved marinade, ties the entire dish together, creating a well-rounded, tasty, and nutritious meal that’s ready to impress.

The Foundation: Fluffy Couscous
Couscous, a North African staple, forms the perfect light and fluffy base for this vibrant bowl. Made from durum wheat semolina, it’s known for its incredibly quick cooking time, making it an ideal choice for busy weeknights. While instant couscous is readily available and convenient, cooking it in rich chicken stock instead of plain water is a game-changer. The stock infuses each tiny grain with savory depth, complementing the bold flavors of the Moroccan chicken and roasted vegetables. Its mild flavor and absorbent nature make it the perfect canvas for the spices and sauces, ensuring every bite is balanced and flavorful.
Crafting the Zesty Moroccan Sauce
No Moroccan bowl is complete without a tantalizing sauce to bring all the elements together. Our Spicy Moroccan Sauce is a revelation, designed to perfectly complement the spiced chicken and roasted vegetables. It’s a clever creation that utilizes a portion of the reserved chicken marinade, ensuring that no flavor goes to waste. By blending this spicy yogurt base with creamy mayonnaise, a touch of roasted garlic (which adds a wonderful mellow sweetness), and a little water to achieve the perfect consistency, you get a sauce that’s both creamy and zesty. It adds a crucial layer of moisture and a tangy counterpoint to the richer flavors, elevating the entire dish. Feel free to adjust the water for your desired thickness – whether you prefer a thick dollop or a lighter drizzle.
Serving Suggestions and Variations
This Moroccan Couscous Bowl is a versatile dish that can be easily adapted to your taste and dietary needs.
Presentation is Key
Serve this dish in individual bowls for a beautiful and personal presentation. Arrange the fluffy couscous first, then artfully pile the roasted vegetables and sliced Moroccan chicken on top. A generous drizzle of the zesty Moroccan sauce and a sprinkle of fresh chopped cilantro not only add visual appeal but also a burst of fresh flavor.
Flavorful Additions
- **Nuts & Seeds:** Toasted slivered almonds, pistachios, or pumpkin seeds can add a delightful crunch and extra nutty flavor.
- **Fresh Herbs:** Beyond cilantro, fresh mint or parsley can introduce a refreshing coolness.
- **Cheese:** A sprinkle of crumbled feta or goat cheese could add a salty, tangy kick, though it steps slightly away from traditional Moroccan profiles.
- **Dried Fruits:** For a touch of sweetness and chewiness, consider adding a small amount of chopped dried apricots or dates, which are often found in Moroccan cuisine.
Meal Prep Excellence
This recipe is fantastic for meal prepping. Cook a larger batch of chicken, roast extra vegetables, and prepare your couscous and sauce. Store components separately in airtight containers in the refrigerator for up to 3-4 days. When ready to eat, simply reheat the chicken and vegetables, fluff the couscous, and assemble your bowl for a quick, healthy, and delicious meal.
Vegetarian & Vegan Adaptations
As mentioned, the roasted vegetables and couscous alone make a fantastic vegetarian meal. For a vegan option, swap the Greek yogurt in the marinade for a plant-based yogurt alternative (like coconut or soy yogurt) and omit the chicken, perhaps replacing it with roasted chickpeas or firm tofu marinated in the same spices.
Health Benefits of this Vibrant Bowl
This Moroccan Couscous Bowl is not just delicious but also incredibly wholesome. It offers a balanced profile of macronutrients and essential vitamins:
- **Lean Protein:** The chicken breasts provide a significant source of lean protein, essential for muscle repair and satiety.
- **Fiber-Rich Vegetables:** Asparagus, bell peppers, and zucchini contribute dietary fiber, aiding digestion and promoting gut health, along with a host of vitamins and antioxidants.
- **Complex Carbohydrates:** Couscous offers complex carbohydrates for sustained energy release.
- **Healthy Fats:** Olive oil provides monounsaturated fats, beneficial for heart health.
- **Spice Power:** Moroccan spices like cumin and turmeric are known for their anti-inflammatory and antioxidant properties.

Roasted vegetable, chicken and couscous bowl.
Ingredients
For the marinade
- 2 tbsp Moroccan spice
- 125ml/1/2 cup Greek yogurt
- 3-4 chicken breasts
For the roasted vegetables
- 400g/14 oz asparagus
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1 shallot, quartered lengthways
- 1 zucchini, sliced
- 3 cloves garlic
- 1 zest of one lemon
- 1 tbsp olive oil
- salt
For the Spicy Moroccan sauce
- 2 tbsp of reserved marinade
- 3 tbsp mayonnaise
- 2 cloves roasted garlic
- 3 tbsp water
For the couscous
- 150g/1 cup couscous
- 500ml/2 cups chicken stock
- chopped cilantro
Instructions
- Mix Moroccan spice (grind it first in a spice grinder if it contains whole spices) with Greek yogurt. Reserve 2 tbsp of the mixture and set aside. Smother chicken with the prepared marinade, cover, and refrigerate for 2 hours or overnight for best results.
- Preheat the oven to 400°F/200°C. Place thickly sliced vegetables and 2 cloves of unpeeled garlic in a large roasting pan. Ensure not to overcrowd the pan, as this will steam the vegetables instead of roasting them. Sprinkle with lemon zest, salt, the remaining 1 clove of crushed garlic, and 1 tbsp of olive oil. Roast for 30 minutes.
- Take the chicken out of the marinade and grill on a barbecue or a griddle for 8-10 minutes on one side and 5 minutes on the other, adjusting time based on thickness to ensure it’s cooked through and juicy.
- Put couscous in a medium bowl. Bring chicken stock to a boil and pour it over the couscous. Cover the bowl and let it absorb the liquid for 8-10 minutes. Then, fluff it with a fork.
- When the vegetables are done, remove them from the oven, cover, and keep warm.
- Peel the roasted garlic and put it in a food processor with the reserved marinade, mayonnaise, and water. Blend until smooth, adding more water if needed to achieve your desired consistency.
- Place sliced chicken breast on top of the couscous along with the roasted vegetables. Serve with additional sauce and chopped cilantro.
