- 1 apple, peeled and sliced
- 3-4 sage leaves, chopped
- 2 tbsp flour, heaped
- 250ml / 1 cup apple cider (hard cider in the US and Canada)
- 250ml / 1 cup chicken stock
- 1 tbsp wholegrain mustard
- 1 bay leaf
- 125ml / 1/2 cup single cream (light cream in the US and Canada)
- 50g / 1/3 cup cheddar, grated (not pre-grated)
