This summer berry tart is truly special. It features a buttery tart crust, broken meringue, and whipped cream, all generously topped with an assortment of fresh berries.

Ingredients

  • 600g/3 cups mixed seasonal berries
  • 4 meringue nests, broken into pieces
  • 250ml/1 cup double/heavy cream
  • 125ml/1/2 cup crème fraîche or full-fat sour cream
  • 25g/1/4 cup Icing Sugar
  • 1 vanilla bean or 1 tsp vanilla extract, seeds scraped out if using bean
  • 1 tbsp rum, optional

For the tart crust

  • 250g/2 cups all-purpose flour, plus extra for dusting
  • 25g/1/4 cup icing sugar
  • 125g/1/2 cup unsalted butter, cold and cut into small cubes
  • 1 large egg
  • Milk, a little splash if needed
  • Butter for greasing the tart tin

Instructions

  • In a large bowl, whisk together the flour and icing sugar. Add the cold, cubed butter and use your fingertips or a pastry blender to rub it into the flour mixture until it resembles coarse crumbs. Add the egg and a tiny splash of milk (if necessary) to bring the dough together. Form the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes.
  • Lightly flour your work surface and a rolling pin. Remove the chilled dough from the fridge and roll it out into a circle large enough to fit a 9-inch (23cm) loose-bottomed tart tin.
  • Lightly grease the tart tin with butter. Carefully drape the rolled dough over the rolling pin and transfer it into the prepared tart tin, gently pressing it into the sides and corners. Trim any excess dough from the edges. Prick the bottom of the dough all over with a fork, then cover it with plastic wrap and refrigerate for another 30 minutes. This second chill is vital for preventing shrinkage.
  • Preheat your oven to 180°C/350°F. Remove the chilled tart dough from the fridge. Line the crust with parchment paper, pressing it firmly against the sides and bottom. Fill the lined tart shell with baking beans or rice. “Blind bake” for 10 minutes. Then, remove the tart from the oven, carefully lift out the parchment paper and baking weights, and return the tart shell to the oven for another 10 minutes, or until it is firm and golden. Let the baked tart shell cool completely on a wire rack before filling. (Do not skip this blind baking step; it ensures a crisp crust and prevents shrinkage!)
  • Just before serving, prepare the filling. In a clean bowl, whip the double cream and crème fraîche with the icing sugar, vanilla bean seeds (or extract), and optional rum until soft peaks form. Gently fold in the broken meringue pieces.
  • Spoon the creamy filling into the cooled tart shell, spreading it evenly. Generously top the tart with your mixed seasonal berries, arranging them attractively. For a beautiful finish, lightly dust with a little extra icing sugar before serving.
