It’s everything you could possibly wish for in a comfort meal and so much more. Best of all, preparing it in a slow cooker or Instant Pot makes it a surprisingly low-effort dish with maximum reward.
Why Beef Stew is the Ultimate Comfort Food
Many would agree that winter and inclement weather call for indulging in luscious comfort food. Hearty stews and casseroles instantly come to mind as the perfect remedies for a cold day. There’s something inherently satisfying about a bowl of steamy, tender beef stew that warms you from the inside out.
While classic recipes like traditional beef stew with dumplings, hearty Irish Beef Stew, or even savory Russian Beef Stew are always welcome, I constantly crave variety. This desire to explore new flavors led to the creation of this exciting take on a classic – an Italian-inspired slow cooker beef stew. After numerous tests to perfect the balance of liquid and ingredients, I couldn’t be more thrilled with the results. This crock pot stew boasts a distinct Italian twist that is both familiar and wonderfully fresh.

The Essence of Italian Beef Stew
Traditional Italian stews are renowned for their slow cooking methods, which are essential for achieving incredibly tender meat and allowing the myriad of flavors to fully meld and peak. They often feature a similar range of fresh, vibrant vegetables and classic Italian aromatics that you’d find in beloved pasta dishes or other iconic Italian recipes. While stews can be enjoyed year-round in Italy, they truly shine during the colder months, making their way to dinner tables across the country as a staple winter warmer. From thin brothy versions to thick, robust concoctions, and often filled with generous chunks of meat, Italian stews are diverse and deeply satisfying.
Choosing the Right Cut of Beef
For this particular recipe, I highly recommend beef shin (also known as beef shank). Although it can be tough and sinewy when cooked quickly, beef shin responds exceptionally well to the extended cooking time provided by a slow cooker. This patient cooking process breaks down the connective tissues, resulting in unbelievably tender, melt-in-your-mouth beef with a rich, profound beefy taste that forms the backbone of our stew. You can often find beef shin at the butcher counter of your local grocery store, or ask your butcher for a suitable cut for slow cooking. Other excellent and affordable options for stew meat include brisket or any lean cuts of beef, simply cut into 1-2 inch cubes.
Assembling Your Italian Stew
Preparing this Italian beef stew is remarkably straightforward. Begin by adding your beef pieces to the slow cooker. Then, layer in the classic Italian flavor builders: a good quality dry red wine like Chianti, rich crushed tomatoes or passata, and a savory combination of chopped onion, carrots, and celery. Freshly chopped rosemary and sliced garlic infuse the stew with aromatic Mediterranean notes. To make this stew even heartier and more texturally interesting, we incorporate creamy cannellini beans and tender artichoke hearts. Oh, and for a final flourish of authentic Italian flavor, a handful of briny olives. All these Italian favorites come together in one pot!
Once all your ingredients are in, simply set your slow cooker, walk away, and let it work its magic. The cooking time will be approximately 8-10 hours on low, allowing the flavors to deepen and the beef to become incredibly tender.

Mastering the Perfect Stew Consistency
Slow cookers are truly fantastic for their convenience and ability to produce incredibly tender meat. However, one common challenge with slow cooking is that liquid doesn’t evaporate as much as it would in an oven or on a stovetop. This can sometimes result in a stew that is a bit too thin or runny for some preferences. Fortunately, there are a couple of easy ways to achieve your desired thickness:
- **Flour and Butter Slurry:** For a classic approach, you can thicken your slow cooker beef stew with a simple mixture of melted butter and flour. A common ratio is 1 tablespoon of flour to 1 tablespoon of melted butter. Whisk them together until smooth to form a roux, then stir this into the simmering stew during the last 30-60 minutes of cooking. Allow it to simmer gently for a few minutes until the stew reaches your desired consistency.
- **Cornstarch Slurry:** A quicker and gluten-free alternative is to use a cornstarch slurry. Mix 1 tablespoon of cornstarch with an equal amount of cold water until smooth. Stir this mixture into the hot stew and cook for another few minutes, stirring occasionally, until it thickens.
- **Natural Reduction in the Oven:** If you prefer to thicken the stew naturally without added thickeners, you can transfer your stew (or the crock insert, if oven-safe) to an oven preheated to 200°C (400°F). Cook it uncovered for approximately 20-30 minutes, or until the liquid reduces and the stew thickens to your liking. Keep an eye on it to prevent over-reduction.
Recipe Tips for Success
- **Instant Pot Adaptation:** This recipe is incredibly versatile and works perfectly in an Instant Pot! I’ve rigorously tested this stew in both slow cooker and Instant Pot methods and loved the results from both. Detailed instructions for the Instant Pot are included in the recipe section, offering a significantly shorter cooking time for those busy weeknights.
- **Stovetop Method:** Don’t have a slow cooker or Instant Pot? No problem! You can easily prepare this stew on a stovetop in a heavy-bottomed Dutch oven. Simply simmer it over low heat for 2-3 hours, or until the beef is fork-tender and the flavors have fully developed.
- **Choosing Your Wine:** Select a dry red wine such as Chianti (which lends a wonderfully authentic Italian touch), Primitivo, Shiraz, or Cabernet Sauvignon. Since the wine’s flavor will integrate throughout the entire stew, choose one that you would genuinely enjoy drinking. The quality of your wine will significantly impact the final depth of flavor.
- **Browning the Beef (Optional):** Many recipes insist on browning beef before slow cooking, claiming it’s essential for flavor development. While I used to subscribe to this belief and would meticulously scrape up every browned bit, extensive testing has shown me that for slow-cooked dishes, the difference in flavor is negligible. You do not need to brown the beef for it to be safe or delicious in a crock pot. Both methods yield wonderfully tender meat, so feel free to skip this step to save time without sacrificing taste.

Serving Suggestions for Your Italian Beef Stew
To fully embrace an authentic Italian experience, I highly recommend serving this robust stew over a generous mound of creamy polenta. This classic Italian side dish, made from cornmeal, offers a slightly sweet taste and a wonderfully silky consistency, making it a fantastic alternative to mashed potatoes.
However, if polenta isn’t your preference, traditional mashed or roasted potatoes are also magnificent companions. Their starchy texture beautifully soaks up the rich, savory broth of the stew, ensuring that every mouthful is a delectable treat. Explore various mashed potato options like Irish Mashed Potatoes (Champ) or a unique Celeriac and Potato Mash with Brown Butter. For a simpler, yet equally satisfying side, try Crispy Air Fryer Roast Potatoes.
For a vibrant vegetable side, consider Pan-Fried Zucchini with Basil and Pecorino, which complements the Italian flavors perfectly. And to ensure not a single drop of that incredible gravy goes to waste, finish your meal by soaking up any remaining stew remnants with warm Garlic Butter Dinner Rolls or crusty artisanal bread!
Storage and Leftovers: Your Stew Gets Even Better!
One of the many joys of a good beef stew is that it often tastes even better the next day! This Italian Beef Stew is no exception. Store any leftovers in an airtight container in the refrigerator for up to five days. The extra time allows the flavors to meld and deepen, becoming even more vibrant and complex.
For longer storage, this stew freezes beautifully for up to three months. This makes it an excellent candidate for meal prepping or “match cooking” – making a large batch to enjoy now and freeze portions for those busy days when you need a quick, comforting meal without the fuss.
To reheat, leftovers can be gently warmed in the microwave, but for the best results, use a saucepan over medium heat on the stovetop. If the stew has thickened too much in the fridge, add a splash of water or beef broth to loosen it to your desired consistency, then let it come to a gentle simmer.

Instructions
For the slow cooker
- Chop onions, celery, and rosemary, cut carrots in big chunks and slice garlic and add to the slow cooker. Top with salt-seasoned beef cubes, then add the beans, halved artichokes, and olives.
- Pour over the crushed tomatoes or tomato passata, red wine, and mix well. Cook on low for 8-10 hours.
For the Instant Pot
- Chop onions, celery, and rosemary, cut carrots in big chunks and slice garlic and add to the Instant Pot. Top with salt-seasoned beef cubes, then add the beans, halved artichokes, and olives.
- Pour over the crushed tomatoes or tomato passata, red wine, and mix well. Cook at high pressure for 40 minutes. Allow for manual pressure release.
Notes
- To thicken the stew, use a combination of 1 tbsp of melted butter plus 1 tbsp of flour (roux) or a cornstarch slurry. Stir into the stew and let it simmer for a few minutes until it thickens to your desired consistency.

- The recipe can also be made on a stovetop in a Dutch oven. It will take 2-3 hours over low heat, allowing it to simmer until beef is tender.
- I chose to use beef shin, which becomes wonderfully tender when given time in a slow cooker or Instant Pot and has a fantastic flavor. It’s one of the best and most affordable meat options for stew. Other good choices include brisket or any lean cuts of beef cut into cubes.
- Choose a dry red wine such as Chianti, Primitivo, Shiraz, or Cabernet Sauvignon. The taste of the wine will be integrated throughout the stew, so choose one that you would enjoy drinking.
