  • 200g / 7oz flat rice noodles
  • 300g / 11oz large shrimp (prawns)
  • 2½ tbsp tamarind purée (ensure it’s purée, not sauce!)
  • 3 tbsp fish sauce
  • 3 tbsp light brown sugar (or traditional palm sugar)
  • 2 tbsp vegetable oil, divided
  • 1 shallot, finely chopped
  • 3 cloves garlic, minced
  • Chilli flakes, to taste (1 tsp recommended for medium heat)
  • 4 green onions, green parts only, cut into 2-inch lengths
  • 2 eggs, lightly beaten
  • 200g / 2 cups bean sprouts
  • 35g / ¼ cup roasted peanuts, chopped
  • 1 lime, cut into wedges for serving

Instructions

  1. Prepare Noodles & Sauce: Soak the flat rice noodles in hot water for 30-40 minutes, or until they are mostly softened but still retain a slight chew. Drain them well but don’t rinse. In a separate bowl, whisk together the tamarind purée, fish sauce, and light brown sugar until the sugar is fully dissolved. Set aside.
