A lighter than a cloud strawberry meringue cheesecake, perfect for any occasion.
Ingredients
For the base
- 200 g / 2 cups digestive biscuits / graham crackers
- 100 g / 1/2 cup butter, melted
For the strawberry cheesecake
- 4 sheets / 2 tsp gelatine (or equivalent powder)
- 300 ml / 1 1/4 cups double cream / heavy cream, divided
- 400 g / 14 oz full fat soft cheese / cream cheese
- 200 g / 1 cup sugar
- 400 g / 1 cup fresh strawberries, processed in a food processor until smooth
- 1 tsp vanilla extract
For the meringue
- 4 egg whites
- 240 g / 1 cup + 2 tbsp caster sugar (superfine sugar)
Instructions
- Prepare the Base: In a medium bowl, crush digestive biscuits or graham crackers (or process them in a food processor) until fine crumbs form. Mix the crumbs thoroughly with the melted butter until well combined.
- Line the bottom of a 9-inch springform pan with the buttery crumbs and press them firmly and evenly with the back of a measuring cup or a large spoon. Place the pan in the refrigerator while you prepare the filling.
- Prepare the Gelatine: Soak the gelatine leaves in a bowl of cold water for about 5 minutes until softened. (If using gelatine powder, follow package instructions for blooming). Heat half of the double cream in a microwave until hot but not boiling. Squeeze out any excess water from the softened gelatine leaves and add them to the hot cream, stirring until they dissolve completely. Set this mixture aside to cool slightly.
- Make the Cheesecake Filling: In a large bowl, whip the soft cheese (or cream cheese) with the sugar, vanilla, and processed strawberries until the mixture is smooth and well blended. Gradually pour in the cooled cream and gelatine mixture, whipping for another minute to ensure everything is thoroughly combined.
- In a separate clean bowl, beat the remaining double cream until soft peaks form. Be careful not to overwhip; the cream should still be soft and not stiff. Gently fold the whipped cream into the strawberry cheese mixture using a spatula until just combined.
- Assemble and Chill: For easier removal, line the sides of your springform pan with a strip of parchment paper. Pour the strawberry cheesecake mixture over the chilled biscuit base in the springform pan. Return the cheesecake to the refrigerator and allow it to set for at least 4 hours, or preferably overnight, to ensure it is firm.
- Prepare the Meringue (Before Serving): In a very clean, grease-free bowl, beat the egg whites with the caster sugar until the mixture triples in volume and forms stiff, glossy peaks. To test if the sugar is fully dissolved, rub a small amount of meringue between your fingers; it should feel smooth with no sugar granules. Another test is to carefully turn the bowl upside down; the meringue should hold firmly.
