  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp hot Spanish paprika
  • 140g / 14 oz canned chopped tomatoes
  • 250g / 1⅓ cup beluga lentils, (brown lentils)
  • 5 cups chicken or vegetable stock, plus additional 500ml / 2 cups for later
  • 1/2 tsp salt
  • 120g / 4 oz fresh spinach
  • 2-3 tbsp grated Parmesan cheese, for serving

Instructions

  1. Heat the olive oil in a soup pot and sauté the chopped onions for 5-7 minutes over low heat until softened. Add the minced garlic and cook for an additional 30 seconds, being careful not to burn it. Now, stir in the cumin, ground coriander, and hot Spanish paprika, stirring briefly to release their aromatic fragrances. Pour in the canned chopped tomatoes, increase the heat to medium, and bring the mixture to a gentle simmer.
  2. Next, stir in the rinsed lentils and 1.25 liters (5 cups) of chicken or vegetable stock, along with a good pinch of salt. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 35 minutes, or until the lentils are tender and cooked through. Stir occasionally to prevent sticking.
  3. Once the lentils are fully cooked, you will notice they have absorbed a significant amount of the stock. At this point, add the additional 500ml (2 cups) of stock. You can add more stock if you prefer a thinner soup consistency. Bring the soup to a simmer once again and stir in the fresh spinach. Allow the spinach to wilt into the soup for a couple of minutes until it’s tender. Taste and adjust the seasoning with more salt if needed.
