Bountiful and bright, Chicken Primavera is packed with Spring greens and features tender chicken breast in a luscious cream sauce.
Ingredients
- 2 tbsp olive oil
- 4 chicken breasts, split in half lengthwise
- Salt and pepper, to taste
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp flour, heaped
- 375ml / 1½ cup chicken stock
- 250ml / 1 cup double / heavy cream, or single / light cream (or soya cream)
- 100g / 4 oz asparagus, trimmed and chopped
- 80g / ½ cup green peas, frozen
- 1 lemon, zest only
- 50g / ½ cup Parmesan cheese, freshly grated
- 100g / 3½ oz fresh spinach
- 4-5 fresh basil leaves, sliced
- Salt to taste
Instructions
- Slice chicken breasts lengthwise to create thinner cutlets. Season generously with salt and pepper. In a large pan, heat the olive oil over medium heat. Brown the chicken cutlets on both sides until golden. Remove the chicken to a plate and set aside. (The chicken will not be cooked all the way through at this stage.)
