Orecchiette Pasta Perfection: The Ideal Shape for Flavor
Orecchiette, meaning “little ears” in Italian, is truly one of my favorite pasta shapes, and for excellent reason. Its unique concave design and slightly thicker texture are not merely charming but highly functional. Unlike many other pasta varieties, orecchiette boasts a delightful chewiness that holds up beautifully, even as leftovers the next day. This makes it a fantastic choice for meal prepping or simply enjoying a second serving without compromising on quality.
The genius of orecchiette lies in its ability to act as miniature scoops, perfectly designed to cradle and capture rich sauces and chunky ingredients. This characteristic makes it an unparalleled vessel for hearty vegetable-based sauces, ensuring every bite is bursting with flavor. When developing this recipe, I specifically chose orecchiette because its shape promised to deliver an exquisite texture and ensure each “little ear” would be loaded with tender roasted butternut squash, savory spicy chorizo sausage, and fresh spinach, all generously coated in a luscious Parmesan sauce.
This pasta dish transcends a simple meal; it’s a hearty and deeply satisfying one-pan dinner that is as visually appealing as it is delicious. Should orecchiette not be readily available in your local grocery store, don’t fret! You can easily substitute it with other similar shapes like pasta shells, also known as conchiglie, or even cavatappi. While pasta shells offer a similar sauce-catching capability, their slightly deeper and thinner structure might alter the texture slightly. The key is to choose a pasta that can hold up to the robust ingredients and cling to the flavorful sauce.

The Secret to a Creamy Parmesan Sauce (Without Cream!)
The sauce in this Orecchiette Pasta with Chorizo and Butternut Squash recipe is remarkably simple yet incredibly profound in flavor. What makes it truly special is its ability to achieve a rich, creamy texture without the addition of heavy cream, making it a lighter option without sacrificing any of the indulgence. The depth of flavor is meticulously built from a few key ingredients: the aromatic spice of the chorizo sausage, a high-quality chicken stock, and a generous amount of freshly grated Parmesan cheese.
The magic happens as the rendered fat from the chorizo deglazes the pan, infusing the base with its smoky, paprika-rich essence. When combined with the starchy pasta water (which should always be reserved!) and the chicken stock, this creates a flavorful liquid. The true secret to the creamy consistency lies in the Parmesan cheese. As it melts into the hot pasta and liquid, it emulsifies, creating a velvety, luxurious sauce that beautifully coats every piece of orecchiette.
This “cream-free” creaminess is not only a fantastic culinary trick but also a thoughtful consideration for those with lactose sensitivities, like my son. Parmesan cheese, through its extensive aging process, naturally contains very low levels of lactose, making it a more digestible option for many. This allows everyone to enjoy a truly decadent pasta experience without discomfort. For the best results, always opt for freshly grated Parmesan cheese over pre-grated varieties, which often contain anti-caking agents that can hinder smooth melting and diminish the authentic flavor.

Spotlight on Star Ingredients: Chorizo and Butternut Squash
At the heart of this incredible pasta dish are two powerhouse ingredients: the bold, spicy chorizo sausage and the naturally sweet, earthy roasted butternut squash. It’s truly remarkable how these distinct flavors come together, creating a symphony for the palate that feels both familiar and exciting. This dish is a celebration of autumn’s bounty, inspired by the vibrant colors and comforting tastes of the season.
The Allure of Chorizo Sausage
Chorizo sausage brings a wonderful complexity to the dish. Its characteristic paprika-infused spice and robust pork flavor create a fantastic counterpoint to the sweetness of the butternut squash. When cooked, raw chorizo releases its delicious, seasoned fat, which becomes the foundational flavor for our creamy sauce. This rendered fat not only adds richness but also helps to carry the vibrant spices throughout the entire dish. Opt for a good quality raw chorizo (not the cured, ready-to-eat kind) for the best flavor and texture.
The Sweetness of Roasted Butternut Squash
Butternut squash, with its gentle sweetness and smooth texture, is the perfect autumnal vegetable. Roasting it transforms its natural sugars into a caramelized delight, intensifying its flavor and adding a subtle nuttiness that beautifully complements the chorizo. The high heat of the oven crisps the edges while keeping the interior tender, creating irresistible little cubes of golden goodness. Beyond its incredible taste, butternut squash is packed with essential nutrients, including a high amount of Vitamin A, Vitamin C, and dietary fiber, making this dish not just delicious but also wholesome.
A Match Made in Autumn
The brilliance of this recipe lies in the perfect balance achieved between the spicy kick of the chorizo and the inherent sweetness of the butternut squash. This interplay of flavors creates a dynamic and well-rounded profile that prevents the dish from being overly sweet or too spicy. The visual appeal is just as captivating – the deep red of the chorizo, the golden orange of the squash, and the vibrant green of the spinach create a truly stunning presentation on your plate. There’s a profound satisfaction that comes from cooking with ingredients that are in season, enjoying them at their peak freshness and flavor. What is your favorite way to incorporate butternut squash into your fall cooking?

Delicious orecchiette pasta with a spicy chorizo sausage, spinach and roasted butternut squash in a creamy Parmesan sauce.
Ingredients
- 450g / 1/2 butternut squash, about 3.5 cups cubed
- Salt
- 3 tbsp olive oil, divided
- 400g / 1 lbs raw chorizo sausage, approx. 6 sausages, removed from casings
- 1-2 cloves garlic, minced
- 2 cubes / 1/2 cup frozen spinach, thawed and squeezed dry, or fresh spinach
- 1 lbs orecchiette pasta, or pasta shells (conchiglie)
- 350 ml / 1 1/4 cups chicken stock
- 50 g / 1/2 cup freshly grated Parmesan cheese, plus more for serving
Instructions
-
Prepare and Roast Butternut Squash: Preheat your oven to 200°C (400°F). Carefully peel the butternut squash, then cut it in half lengthwise and scoop out the seeds. Cut one half into roughly 2-inch cubes (reserve the other half for another recipe). In a large bowl, toss the squash cubes with a pinch of salt and half of the olive oil (1.5 tbsp). Spread the seasoned squash in a single layer on a large, rimmed baking sheet. Roast in the preheated oven for 40-45 minutes, or until the squash is fork-tender and beautifully golden brown with caramelized edges.
-
Cook Pasta and Chorizo: Approximately 15 minutes before the butternut squash is expected to be done roasting, bring a large pot of generously salted water to a rolling boil. Add the orecchiette pasta and cook according to package directions until al dente. While the pasta cooks, remove the raw chorizo sausage from its casings and place it in a large skillet or Dutch oven with the remaining olive oil (1.5 tbsp). Cook over medium-high heat, breaking up the sausage into small pieces with a wooden spoon as it browns. Continue cooking until the chorizo is fully cooked through and slightly crispy. Drain any excess fat if desired, leaving just enough to coat the pan. Add the minced garlic to the pan and cook for another 30 seconds until fragrant, being careful not to burn it.
-
Combine and Finish the Sauce: Once the pasta is al dente, drain it, reserving about 1/2 cup of the starchy pasta water. Add the defrosted (and squeezed dry) spinach or fresh spinach directly to the pan with the cooked chorizo and garlic. Stir briefly until the spinach wilts. Then, add the drained orecchiette pasta, freshly grated Parmesan cheese, and chicken stock to the skillet. Toss everything together vigorously until the pasta is well coated in the savory, creamy sauce. If the sauce appears too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency. Taste the pasta and adjust seasoning with more salt and freshly ground black pepper if needed.
-
Integrate Roasted Squash and Serve: By this point, your roasted butternut squash should be ready. Carefully remove it from the oven and gently stir it into the pasta mixture in the skillet. Be mindful not to break up the tender squash cubes too much. Serve the pasta immediately, garnished with an extra sprinkle of freshly grated Parmesan cheese and, if desired, a scattering of fresh parsley or chives for a touch of freshness and color. Enjoy this hearty and flavorful autumn delight!
