The Heart of the Dish: Chicken and Salsa Verde

The term “salsa verde” literally translates to ‘green sauce’, a name that perfectly encapsulates its vibrant color and fresh ingredients. This flavorful condiment boasts a rich history, tracing its origins back to ancient Aztec times. Today, salsa verde continues to be a cornerstone of Mexican cuisine, elevating an array of dishes. Whether it’s a generous dollop on your favorite tacos, a splash over crispy nachos, or, in this case, bathing whole chicken breasts to create a luscious, stew-like pulled chicken, its unique profile is simply irresistible.

But what exactly gives salsa verde its distinctive character? While its cousin, red salsa, is often renowned for its spicier kick and relies on a base of red ingredients—think ripe tomatoes, fiery chillies, red (and white) onions, garlic, coriander, and lime—salsa verde distinguishes itself with an unparalleled tanginess. Its signature flavor comes from a medley of primarily green ingredients: tart tomatillos, vibrant jalapeños, pungent garlic, fresh onion, aromatic coriander, and a squeeze of lime juice.

And what are “tomatillos,” you ask? These fascinating little green fruits, often encased in a papery husk, are the undisputed stars of salsa verde. They possess a flavor profile that ranges from mildly sour to delightfully tart. In the UK, they might be recognized as a green physalis, similar in taste to a gooseberry. Across the Atlantic in the US, they are also known as cape gooseberries, golden berries, or Peruvian groundberries. It is this specific, refreshing sourness that infuses our green salsa chicken with its characteristic zing. Chicken, with its inherent mild sweetness, forms a perfect canvas. When slow-cooked or pressure-cooked in this vibrant tomatillo salsa, it transforms into an irresistibly moreish Mexican shredded chicken, ready to be incorporated into countless culinary creations.

Expert Recipe Tips for Perfect Salsa Verde Chicken

  • Chicken Choice: While I’ve opted for skinless, boneless chicken breasts in this recipe, feel free to substitute with boneless chicken thighs if that’s your preference. Thighs offer a slightly richer flavor and stay incredibly moist.
  • Preparation is Key: For even cooking and easier shredding, I highly recommend cutting larger chicken breasts in half. This ensures they cook thoroughly and become wonderfully tender in the Instant Pot.
  • The Power of Salsa Verde: The pre-made green tomatillo salsa is the absolute flavor powerhouse in this dish, imparting a vibrant, fruity tang that deeply permeates the chicken. In the UK, I find Gran Luchito to be an excellent choice. American readers are spoiled for choice with a wide array of fantastic brands readily available.
  • Homemade Alternative: If you have a little extra time and want to truly elevate the flavor, consider making my Chile Verde (Green Chili) from scratch. It features similar bright flavors, though it uses pork instead of chicken for a delicious variation.
  • Instant Pot Simplicity: Making pulled chicken in the Instant Pot is one of the most straightforward cooking methods, yet it yields some of the most profound flavor impacts. It’s a recipe you’ll find yourself reaching for repeatedly.
  • Endless Versatility: This shredded chicken is incredibly versatile. While I’ve demonstrated making shredded chicken tacos this time, the tender, steeped meat is perfect for any of your favorite Mexican-inspired meals. Don’t forget to check out the extensive serving suggestions below for more ideas!
  • No Instant Pot? No Problem! If you don’t own an Instant Pot, you can still enjoy this fantastic recipe. Simply follow the instructions and utilize your trusty slow cooker for a hands-off cooking experience. Cook on HIGH for 2 hours or LOW for 4 hours until the chicken is fork-tender.
  • Shredding and Absorption: After pressure cooking, the chicken might initially appear to be “swimming” in the sauce. Don’t worry! Once shredded and returned to the pot, allow it to rest for 10-15 minutes. The tender chicken will absorb much of the delicious salsa, resulting in a rich, juicy, and perfectly coated dish.

Unleash Its Potential: Creative Serving Suggestions

The beauty of Instant Pot Salsa Verde Chicken lies in its incredible adaptability. While I love serving mine simply on soft flour tortillas, taco-style with a sprinkle of fresh toppings, I truly meant it when I said there are “multiple recipes to explore!” This adaptable pulled chicken is a fantastic foundation for a myriad of Mexican-inspired dishes. Get ready to elevate your mealtime:

  1. Enchilada Perfection: Transform this tender chicken into the ultimate Mexican comfort food by filling enchiladas. Roll it up with cheese, smother with more salsa verde, and bake until bubbly and golden.
  2. Hearty Burrito Bliss: Create satisfying burritos by stuffing tortillas with this chicken, along with rice, beans, corn, and your favorite toppings for the best of both worlds – wrapped goodness and abundant fillings.
  3. Low-Carb Burrito Bowls: For a lighter, lower-carb option, serve the chicken “naked” (sin wrap or rice) in a vibrant burrito bowl. Pile it high with crisp lettuce, avocado, pico de gallo, and a dollop of sour cream.
  4. Cheesy Quesadilla Delight: Press the salsa verde chicken between two large tortillas with plenty of melting cheese to create a mouthwatering quesadilla. Pan-fry until golden and gooey.
  5. Protein-Packed Salads: Add a generous scoop of this flavorful chicken to a vibrant bean salad or any green salad for an instant boost of protein and Mexican flair.
  6. Simple & Satisfying: Serve it simply over fluffy Mexican rice or plain white rice for an easy, comforting meal that’s bursting with flavor.
  7. Nachos Supreme: Layer over tortilla chips with melted cheese, jalapeños, and all your favorite nacho toppings for an epic appetizer or casual dinner.
  8. Tostadas: Spread a thin layer over crispy tostada shells with refried beans, lettuce, and a sprinkle of cotija cheese.
  9. Soup Booster: Stir into chicken broth with corn, black beans, and diced avocado for a quick and hearty soup.

And on the 7th day, you can finally take a well-deserved pulled chicken break… or maybe just make more!

Storage, Leftovers, and Meal Prep Savvy

One of the many delights of Instant Pot pulled chicken is that it’s truly one of those divine dishes that often improves with time. This makes leftovers not just convenient, but a real treat to look forward to! To maximize flavor and freshness, store the shredded chicken and its accompanying salsa verde in an airtight container in the refrigerator for up to 4-5 days. When you’re ready to enjoy it again, simply reheat gently on the stove top over medium-low heat, stirring occasionally until warmed through. You can also microwave it in short bursts, stirring in between.

If you initially made pulled chicken tacos for your first meal, get creative for round two! The versatility of this chicken makes it perfect for transforming into quesadillas, a satisfying burrito bowl, or even as a topping for nachos or a quick salad. Embracing the leftover possibilities means you’ll enjoy delicious, fuss-free meals all week long, making this recipe a meal prep superstar.

Instant Pot salsa verde chicken is a mild and dreamy marinated shredded chicken recipe for when you’re craving Mexican flavours.

Equipment

  • Instant Pot

Ingredients

  • 4 skinless boneless chicken breasts, large
  • tsp cumin
  • 1 tsp salt
  • 1 – 1/2 tsp dried chilli flakes (adjust to taste)
  • 3-4 cloves garlic, pressed or minced
  • 300ml / 1¼ cups prepared green tomatillo salsa

Instructions

  • In your Instant Pot liner, combine all ingredients except for the chicken breasts. Mix well to create the sauce. Cut larger chicken breasts in half to ensure even cooking, then arrange them at the bottom of the Instant Pot. Pour the prepared sauce evenly over the chicken, ensuring each piece is well coated.
  • Secure the Instant Pot lid and set the valve to the “sealing” position. Pressure cook on Manual (or Pressure Cook) at high pressure for 9 minutes. Once cooking is complete, allow for a natural pressure release. This means letting the pressure release on its own until the float valve drops, which usually takes about 10-15 minutes. Carefully remove the chicken from the pot and use two forks to shred it into desired pieces. Return the shredded chicken to the liquid remaining in the pot. Initially, it may appear as though the chicken is swimming in too much sauce, but give it 10-15 minutes. The tender chicken will absorb most of the delicious salsa, becoming incredibly juicy and flavorful.
  • Slow Cooker Instructions: If you’re using a slow cooker, follow the recipe up to step 2 by mixing all ingredients and coating the chicken. Instead of using the Instant Pot, transfer the chicken and sauce mixture to your slow cooker. Cook on HIGH for 2 hours or on LOW for 4 hours, or until the chicken is fork-tender and easily shredded. Once cooked, shred the chicken with two forks and return it to the sauce to absorb the flavors, as described in the Instant Pot instructions.
