Shrimp Scampi Linguine

Shrimp Scampi Linguine is an easy dinner recipe that feels luxurious. Simply sauté the shrimp in butter with garlic and white wine, then mix with pasta!

Ingredients

  • 1 tbsp olive oil
  • 3 tbsp butter
  • 2 cloves garlic, sliced
  • Salt to taste
  • Pepper to taste
  • 500g / ½ lb shrimp/prawns (peeled and deveined)
  • ½ lemon, juice only (freshly squeezed)
  • 125ml / ½ cup dry white wine
  • 500g / 1.1 lbs linguine
  • 1-2 tbsp chopped fresh flat leaf parsley, for garnish

Instructions

  1. Cook the linguine in a large pot of generously salted, boiling water according to package instructions until al dente.
  2. A few minutes before the pasta is finished cooking, place a large skillet or pan over medium heat. Add the olive oil and 1 tablespoon of butter. Once the butter is melted and shimmering, add the shrimp with a pinch of salt. Cook for about 1 minute on each side, until they turn pink and opaque. Immediately remove the cooked shrimp to a separate plate.
