Ingredients

  • 2 cloves garlic, minced
  • 4-5 leaves fresh basil or 1 tsp dried basil
  • 70ml / 1/4 cup vodka, could be omitted
  • 400ml / 14 oz tomato passata or canned crushed tomatoes
  • 85ml / 1/3 cup double/heavy cream
  • salt to taste
  • 150g / 1 cup grated mozzarella cheese

Instructions

  • To prepare the meatballs, combine the ground beef, egg, 1 tsp each of dried basil and oregano, breadcrumbs, and salt in a large bowl. Mix gently until just combined (overmixing can make meatballs tough). Form the mixture into 12 evenly sized meatballs.

  • Bring a large pot of salted water to a rolling boil for the pasta. While the water heats, warm 1 tbsp of the olive oil in a large frying pan over medium-high heat.
