Eating seasonally has always been a practice I’ve consciously pursued. My move from Canada to the UK significantly enhanced this endeavor, as British markets and shops seem intrinsically linked with local farmers, offering produce that genuinely reflects the current harvest. This connection makes it effortless to simply walk in and choose the freshest, most affordable, and visually appealing vegetables available, without the need for extensive research. The more vibrant and colorful the selection, the better!

Among the treasures of the cooler months, winter squashes consistently capture my attention and find their way into my shopping basket week after week. Their diverse shapes, sizes, and deep, earthy hues are not only a feast for the eyes but also promise incredible culinary potential.

The Magic of Roasted Squash in Pasta

It’s simply impossible not to fall in love with the gorgeous colors and amazing flavors that winter squash offers. And when it comes to preparing squash, roasting is, in my opinion, something truly special. This cooking method intensifies its natural sweetness and deepens its earthy notes, leading to a delightful caramelization on the edges. High-temperature oven roasting also efficiently removes excess water from the vegetable, concentrating its flavor and yielding a perfectly tender yet firm texture that’s ideal for pasta dishes.

I find myself reaching for squash, especially roasted squash, throughout the autumn and winter months. Its versatility knows no bounds. For instance, my Creamy Orzo Pasta with Roasted Butternut Squash is a beautiful vegetarian dish that feels incredibly complete and satisfying, showcasing squash’s ability to create a rich, creamy texture without heavy creams. The inherent sweetness and robust structure of roasted squash make it an unparalleled base for hearty, comforting meals.

Squash also pairs exceptionally well with aromatic herbs, with sage being a particular favorite. The earthy, slightly peppery notes of sage beautifully complement the squash’s sweetness, creating a harmonious flavor profile. I’ve celebrated this classic combination in my Butternut Squash and Sage Risotto with Goat Cheese, a dish whose flavors I will cherish forever. Beyond pasta and risotto, roasted squash can elevate a simple meal to something extraordinary. You can successfully incorporate it into vibrant salads, adding a tender, sweet element, or blend it into creamy soups for the best texture and a hint of natural sweetness. The possibilities are truly endless!

Embracing Seasonal Goodness: Swiss Chard and Winter Vegetables

Beyond the delightful squash, this pasta dish shines by incorporating Swiss chard, a leafy green that brings both vibrant color and a wealth of nutrients to the table. Swiss chard, like many seasonal vegetables, is at its peak during the cooler months, offering fresh flavor and a pleasing texture that stands up beautifully to the other ingredients. Its slightly earthy taste and tender leaves, when lightly sautéed, provide a wonderful counterpoint to the sweetness of the roasted squash and the richness of any added pancetta.

Choosing seasonal produce isn’t just about taste; it’s a mindful decision that benefits both our health and the environment. Seasonal vegetables are typically fresher, more flavorful, and often more affordable because they haven’t traveled long distances or required extensive greenhouse cultivation. They are also packed with essential vitamins and minerals, offering a natural boost to our well-being. By opting for seasonal ingredients like Swiss chard, we not only enjoy superior quality but also support local farmers and sustainable agricultural practices.

If Swiss chard isn’t readily available, don’t worry! Other robust leafy greens like fresh spinach or kale make excellent substitutes. Spinach offers a milder flavor and wilts quickly, while kale provides a heartier texture and a slightly bitter note that complements the dish beautifully. Experimenting with these alternatives allows you to enjoy this pasta dish year-round while still embracing the spirit of seasonal eating.

Building Flavor: Pancetta (or Bacon) and Sage

To deepen the complexity of flavors in this roasted squash pasta, we introduce a small amount of diced pancetta. Pancetta, a cured Italian pork belly, renders beautifully when cooked, releasing its savory fats and becoming deliciously crispy. This adds a crucial layer of salty, umami richness that perfectly balances the sweet squash and earthy chard. Its subtle, meaty notes provide a satisfying depth without overpowering the delicate vegetable flavors.

For those who prefer, regular bacon can be used as an excellent substitute for pancetta. Both offer a similar savory element and delightful crispness. However, if you are looking for a vegetarian version of this dish, omitting the pancetta or bacon entirely works wonderfully. The roasted squash, Swiss chard, sage, and Parmesan cheese are flavorful enough on their own to create a truly outstanding meal.

Sage is the quintessential herb for squash, and a few fresh leaves, finely chopped, infuse the dish with its distinct, aromatic, and slightly peppery fragrance. This herb enhances the natural warmth of the squash and ties all the flavors together, making each bite incredibly fragrant and comforting. Whether fresh or dried, sage is a non-negotiable ingredient that truly elevates this pasta from good to unforgettable.

Crafting the Perfect Sauce: Beyond Cream and Tomato

What makes this pasta recipe stand out is its clever approach to creating a sauce. Instead of relying on heavy cream or a rich tomato-based concoction, this dish crafts a light yet flavorful coating for the pasta. The secret lies in a harmonious combination of the roasted squash, starchy pasta water, and freshly grated Parmesan cheese. This method highlights the natural flavors of the main ingredients, allowing them to truly shine.

As the pasta cooks, it releases starch into the boiling water, creating a cloudy, slightly viscous liquid. This “liquid gold” is crucial for binding the dish together. When a splash of this starchy water is added to the sautéed squash and chard, it helps to emulsify with the small amount of olive oil and the rendered fat from the pancetta, forming a silky, light sauce. The melted Parmesan cheese then adds its signature salty, nutty, and umami depth, thickening the sauce further and coating each strand of pasta beautifully.

This minimalist approach results in a dish that feels substantial and satisfying without being heavy. It’s a testament to how simple, quality ingredients, when properly prepared, can create a gourmet experience. The natural sweetness of the squash, the fresh bite of the chard, the savory notes of pancetta, and the sharpness of Parmesan all come together, enveloped in a light, flavorful glaze that truly celebrates the essence of seasonal cooking.

Recipe Tips and Variations

  • **Choosing Your Squash:** This recipe is incredibly adaptable to various types of winter squash. Butternut, acorn, kabocha, and delicata squash are all excellent choices, each offering slightly different nuances in flavor and texture. Avoid spaghetti squash, as its stringy texture is not ideal for this creamy, hearty pasta dish.
  • **Ahead of Time Preparation:** For ultimate convenience, roast your squash a day or two in advance. I often roast a large squash at the beginning of the week and use it in various dishes, from pasta to salads and soups. This simple “cook ahead” method significantly streamlines dinner preparation on busy weeknights, turning a potentially complex meal into a quick and easy one.
  • **Protein Power-Up:** While pancetta adds a wonderful savory depth, feel free to use regular diced bacon as a readily available alternative. For a wholesome vegetarian meal, simply omit the meat altogether. The dish is incredibly flavorful with just the roasted squash, Swiss chard, and Parmesan cheese. You could also add cooked chickpeas or white beans for extra protein in a vegetarian version.
  • **Leafy Green Alternatives:** If Swiss chard is not in season or hard to find, fresh spinach or kale can be substituted. Spinach will wilt down very quickly and has a milder flavor, while kale will offer a more robust texture and a slightly earthy taste. Adjust cooking times accordingly for these greens.
  • **Pasta Perfection:** While penne is a classic choice, any short pasta shape will work beautifully in this recipe. Consider orecchiette, rigatoni, farfalle, or even fusilli. The nooks and crannies of these shapes are perfect for catching the delicious squash sauce and bits of pancetta and chard.
  • **Flavor Boosters:** For an extra layer of brightness, a squeeze of fresh lemon juice or a sprinkle of lemon zest can be added at the end. A pinch of red pepper flakes can also introduce a subtle warmth and gentle heat, if you enjoy a little spice.

This roasted squash pasta with Swiss chard takes advantage of the seasonal vegetables and delivers healthy and delicious dinner.

Ingredients

  • 500 g(1/2 small) winter squash, such as butternut, acorn or kabocha
  • 2 tbsp olive oil, divided
  • 50g/1/4 cup pancetta, diced or bacon
  • 4 leaves fresh sage (or 1/4 tsp dried sage), chopped
  • 4-5 stalks of Swiss Chard, leaves only, sliced
  • 1 lbs short pasta , such as penne or your preference
  • salt and pepper to taste
  • 50g/1/2 cup Parmesan cheese, freshly grated

Instructions

  • Preheat your oven to 220C/450F. Carefully half the squash and scoop out all seeds, then cut it into quarters. Place the squash pieces in a roasting pan and drizzle with 1 tablespoon of olive oil, followed by a sprinkle of salt and pepper. Roast in the oven for approximately 20 minutes, or until the squash can be easily pierced with a knife. Allow it to cool sufficiently until it is safe to handle.
  • While the squash is roasting, cook the pasta. Bring a large pot of generously salted water to a rolling boil. Add your chosen short pasta and cook according to the package instructions until al dente.
  • Once the roasted squash is cool enough to handle comfortably, peel off its skin and cut the flesh into 1-inch dice.
  • Heat the remaining 1 tablespoon of olive oil in a large frying pan or skillet over medium heat. Add the diced pancetta and cook for 5-7 minutes, stirring occasionally, until it becomes crispy and golden. (If using thinly sliced pancetta or bacon, this may take less time).
  • To the pan with the pancetta, add the cubed roasted squash, sliced Swiss chard, and chopped fresh sage. Continue to cook for another 2-3 minutes, stirring constantly, until the chard has softened and wilted. When the pasta is ready, drain it, but be sure to reserve about 1/2 cup of the starchy cooking water. (For a richer, creamier texture, you can also stir in 125ml/1/2 cup of double/heavy cream at this stage, if desired.)
  • Finally, add the hot, drained pasta, freshly grated Parmesan cheese, and a splash of the reserved pasta water to the pan with the squash mixture. Stir everything gently to combine, allowing the cheese to melt and the ingredients to form a light, cohesive sauce. Taste the pasta and adjust seasoning with additional salt and pepper as needed. Serve immediately and enjoy!

Notes

  • This recipe utilizes approximately half of a medium-sized winter squash. The remaining half can be reserved and used in other delightful dishes. Feel free to explore the suggested recipe links within the post for inspiration.
  • To easily adapt this recipe for a vegetarian diet, simply omit the pancetta. The combination of roasted squash, Swiss chard, sage, and Parmesan cheese provides ample flavor and satisfaction.
