Ingredients

For the Black Bean Filling

  • 800g/28oz black beans, drained and rinsed
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, pressed
  • 1 tbsp cumin
  • 2 tsp dried coriander
  • 1 tsp chilli powder
  • 1 tsp oregano
  • 1 tbsp chipotle chilli paste
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 11g/½ cup vegetable stock or water
  • 110g/½ cup corn, frozen or canned
  • Salt to taste

For the Cilantro Lime Slaw

  • ¼ head red cabbage, thinly sliced
  • ½ lime, juice only
  • 1 tsp white wine vinegar
  • 5g/⅓ cup cilantro/coriander, chopped
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a frying pan over low heat. Add chopped onion and sauté for 5-7 minutes until softened and translucent. Add pressed garlic and cook for an additional 30 seconds, being careful not to burn it.
  2. Add the drained and rinsed black beans, cumin, dried coriander, chilli powder, oregano, chipotle paste, tomato paste, bay leaf, and vegetable stock or water along with a pinch of salt. Bring the mixture to a boil, then reduce heat to medium and simmer for about 10 minutes, stirring occasionally, until most of the liquid has evaporated and the flavours have combined.
  3. Using the back of a spoon, mash approximately a quarter of the bean mixture against the side of the pan. This will release starches and create a thicker, creamier consistency. Stir in the corn and cook for 5 minutes longer to heat through. Taste and adjust seasoning with more salt if needed.
  4. To prepare the slaw, slice the red cabbage as thinly as possible (using a mandoline if available). In a bowl, toss the sliced cabbage with lime juice, white wine vinegar, salt, and chopped cilantro. Set aside for at least 15-30 minutes to allow the flavours to meld and the cabbage to slightly tenderize.
  5. Warm your choice of corn or wheat tortillas according to package instructions. Serve the warm black bean filling and cilantro lime slaw with the tortillas and various other toppings of your choice.
