Ingredients

  • 2 chicken breasts, cut into half lengthwise
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 3 strips of bacon, chopped
  • 2 cloves garlic, minced
  • 500ml / 2 cups double/heavy cream (see notes for non-dairy substitute)
  • 1 tbsp tomato paste
  • 3-4 leaves fresh basil, sliced, or 1/4 tsp dried basil
  • 50g / 1/2 cup freshly grated Parmesan cheese
  • Salt to taste
  • 450g / 1 lbs pasta shells or any other short pasta

Instructions

  1. Cook the pasta in a large pot of generously salted boiling water according to package instructions until al dente.
  2. While pasta cooks, heat 1 tbsp of olive oil in a large pan over medium heat. Season the chicken breast cutlets with salt and pepper. Pan-fry for 5 minutes on each side, or until golden brown on the outside and cooked through. Remove the chicken to a separate plate and keep warm.
  3. In the same pan, add the chopped bacon and cook until crispy and the fat is rendered. Discard all but 1 tablespoon of bacon fat. Add the minced garlic and cook for about 30 seconds, stirring constantly, making sure not to burn it.
  4. Pour in the heavy cream, stir in the tomato paste, and add the sliced fresh basil (or dried basil). Bring the mixture to a gentle boil, then immediately reduce the heat to low. If the sauce appears too thick, add a little of the reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.
  6. Slice the cooked chicken breasts into strips. Divide the pasta among serving bowls and top with the sliced chicken. Serve immediately, garnished with an extra sprinkle of grated Parmesan cheese and fresh basil leaves.
