  • 8 slices of prosciutto
  • 6-8 cherry tomatoes, quartered
  • 3-4 basil leaves, sliced
  • Salt
  • 8 slices smoked salmon
  • 1 cup /250 ml double cream/ heavy cream
  • 8 leaves of rocket/arugula
  • Chilli infused olive oil, optional

Instructions 

  • Slice a baguette into thin rounds. Toast these slices in olive oil in a frying pan over medium heat until they are golden and crispy, with a slight char around the edges. Set aside.
  • In a small bowl, gently combine the quartered cherry tomatoes with sliced fresh basil, 1/2 teaspoon of extra virgin olive oil, and a pinch of salt. Mix well and set this delicious mixture aside to let the flavors meld.
  • Prepare your pear and goat cheese. Slice the firm but ripe pear into very thin pieces. Then, slice the goat cheese into approximately 8 portions, suitable for topping the crostini. Arrange them for easy assembly.
  • For the whipped cream: pour the double cream or heavy cream into a clean jam jar.
