  • 2 clementines
  • 1 lemon
  • 1 lime
  • 1/2 cup / 100g sugar
  • 4 whole cloves
  • 2 cinnamon sticks
  • 2 fresh bay leaves
  • 1 whole nutmeg
  • 1 vanilla bean
  • 2 star anise
  • 2 bottles of good red wine (e.g., Merlot, Grenache)

Instructions

  • In a medium pot, combine the sugar, the peeled zest (avoiding the white pith) of clementine, lemon, and lime, along with the fresh juice of both clementines. Add the whole cloves, cinnamon sticks, fresh bay leaves, and about 10 gratings of a whole nutmeg.
