  • 500g/½ lb shrimp/prawns, peeled and deveined
  • 1/2 lemon, juice only
  • 125ml/½ cup dry white wine
  • 500g/½ lbs linguine
  • 1-2 tbsp chopped flat leaf parsley, for garnish

Instructions

  1. Cook the linguine in a large pot of generously salted, boiling water according to package instructions until al dente.
  2. A few minutes before the pasta is cooked, heat a large skillet or pan over medium heat. Add the olive oil and 1 tablespoon of butter. Once the butter is melted and shimmering, add the shrimp with a pinch of salt and cook for approximately 1 minute on each side, until they turn pink and opaque. Immediately remove the cooked shrimp to a separate plate, reserving any juices.
  3. To the same pan, add the remaining butter and the sliced garlic. Sauté over low heat for about 1 minute until fragrant, being careful not to burn the garlic.
