The Ultimate Vegan Cream of Mushroom Soup: A Rich & Comforting Recipe

As the days grow shorter and a chill fills the air, there’s a distinct call for warmth and comfort that only a steaming bowl of homemade soup can answer. For many, this craving leads straight to a timeless classic: Cream of Mushroom Soup. It evokes memories of childhood, cozy evenings, and simple, nourishing goodness. This recipe aims to recreate that beloved comfort, elevating it with quality plant-based ingredients to deliver a vegan and dairy-free version that’s just as satisfying, if not more so!

Gone are the days when going vegan meant compromising on taste or texture. This recipe proves that you can achieve incredible creaminess and deep, earthy flavors without any dairy. It’s a testament to the versatility of plant-based cooking and the magic of mushrooms.

Why You’ll Absolutely Love This Vegan Mushroom Soup

For many of us, classic cream of mushroom soup holds a nostalgic place in our hearts. It’s that familiar, earthy, and supremely comforting dish that instantly makes everything feel better. When developing this recipe, my goal was clear: to honour that cherished flavour profile while transforming it into a vibrant, plant-based masterpiece. And I’m thrilled to report, it was not only achievable but remarkably simple!

One of the key discoveries in perfecting this vegan rendition was the use of oat cream. Its naturally neutral flavour and velvety texture provide the perfect base, blending seamlessly with the other ingredients to create an unbelievably smooth and luxurious soup. Unlike some other plant-based creams, oat cream doesn’t impart any overpowering flavour, allowing the rich, umami notes of the mushrooms to truly shine through. This thoughtful substitution makes the soup not just vegan but also completely dairy-free, catering to a wider range of dietary needs and preferences without sacrificing an ounce of deliciousness.

The result is a wonderfully creamy soup that bursts with the delectable nuttiness and deep, savoury essence of mushrooms. Every spoonful is pure joy, a comforting embrace that nourishes both body and soul. This soup has been a resounding hit with everyone who’s tried it, proving that plant-based comfort food can be just as, if not more, irresistible than its traditional counterparts. Prepare to fall in love with your new favourite mushroom soup!

Unlocking Maximum Flavour: The Magic of Mushrooms

When crafting recipes where mushrooms are the star – as they undeniably are in this creamy soup – it’s often a brilliant strategy to incorporate a variety of types. This approach isn’t just about adding different textures; it’s primarily about layering complex flavour profiles, creating a depth that a single mushroom variety might struggle to achieve on its own. Each type of mushroom brings its unique contribution to the symphony of taste in your soup.

Portobello mushrooms are absolutely essential for their deep, robust, and almost meaty flavour, which forms the rich backbone of this soup. Their intensity is unmatched. Alongside them, or as a suitable alternative to chestnut mushrooms, you might consider oyster or shiitake mushrooms. Oyster mushrooms offer a delicate, slightly sweet flavour and tender texture, while shiitake mushrooms contribute a potent umami kick, adding another layer of savoury complexity. While I typically bypass basic white button mushrooms for their somewhat milder flavour profile, they perform exceptionally well in this recipe when paired with the stronger, more earthy portobellos. The combination allows them to soak up and complement the more dominant tastes, rather than getting lost.

Beyond the mushroom selection, one crucial, often overlooked step in elevating any soup to culinary excellence is the diligent taste test. It’s imperative to taste your soup repeatedly throughout the cooking process and, most importantly, right before serving, to ensure it has precisely the right amount of salt. I cannot stress this enough: a soup, no matter how carefully prepared with the finest ingredients, will simply fall flat and lack vibrancy if it’s under-seasoned. The vegetable broth will undoubtedly introduce some initial saltiness, but you’ll almost certainly need to add more to make all the individual flavours truly ‘pop’ and meld together harmoniously. Don’t be shy with the salt shaker; it’s the ultimate flavour enhancer!

Essential Recipe Tips and Notes for Perfect Vegan Cream of Mushroom Soup

  • Mushroom Selection is Key: The variety of mushrooms you choose significantly impacts the final taste of your soup. For a truly rich and nutty depth, I highly recommend combining portobello mushrooms with button mushrooms. Other excellent choices that will work beautifully include porcini or cremini (also known as baby bellas) mushrooms, both known for their earthy, robust flavours. Don’t hesitate to experiment with what’s fresh and available!
  • Choosing Your Plant-Based Cream: I personally find oat cream to be the superior choice for this soup due to its wonderfully neutral flavour profile and silky texture, which mimics dairy cream exceptionally well. It allows the mushrooms to remain the undisputed star. However, if oat cream isn’t available or you have a different preference, soya cream is another fantastic option. Coconut milk can also be used for creaminess, but be aware that it will introduce a distinct, subtle coconut flavour to the soup, altering the traditional profile. Choose the one that best suits your taste!
  • Beyond the Bowl: Versatile Uses: This creamy mushroom soup is not just for sipping! Its rich texture and deep flavour make it an incredibly versatile base. Use it as a luxurious sauce in various vegan casseroles – it’s perfect for creating a classic-tasting vegan green bean casserole. It also pairs wonderfully as a creamy sauce tossed with your favourite pasta for a quick and satisfying meal.
  • Achieving Ultimate Creaminess: For a supremely smooth and velvety soup, blending is a must. You can achieve this by using a powerful food processor, an easy-to-use immersion blender directly in the pot, or a traditional blender. If using a standard blender, work in batches and be cautious with hot liquids – allow the soup to cool slightly before blending to prevent pressure buildup. An immersion blender is often the most convenient option for minimal cleanup.

Perfect Serving Suggestions for Your Vegan Mushroom Soup

A bowl of warm, creamy soup is a delight on its own, but it truly becomes a complete meal when paired with the right accompaniment. For me, the quintessential lunch involves partnering a comforting soup with a delicious sandwich. A hearty Chickpea Salad Sandwich, with its satisfying texture and savoury notes, would undoubtedly hit the spot, creating a harmonious and fulfilling meal.

If you’re in the mood for something lighter, a fresh and vibrant salad can be an excellent choice. Consider a substantial salad like a Roasted Summer Vegetable Salad, which offers a delightful array of textures and flavours to complement the soup’s creaminess. For an even lighter option, a simple, crisp Garden Salad provides a refreshing contrast. And, of course, sometimes keeping it wonderfully simple is best – just grab a thick slice of warm, crusty bread to soak up every last drop of that glorious soup!

To further enhance the experience, a generous sprinkling of freshly ground black pepper adds a pleasant kick and aromatic depth. And for a final touch of freshness and vibrant colour, a handful of finely chopped fresh parsley stirred in just before serving will elevate both the flavour and visual appeal of your homemade Vegan Cream of Mushroom Soup.

Storage and Leftovers: Tips for Your Vegan Mushroom Soup

This delicious Vegan Cream of Mushroom Soup is not only wonderful fresh but also incredibly convenient for meal prepping and enjoying later. Proper storage ensures you can savour its comforting flavours for days to come or even months down the line.

Refrigeration: Any leftover soup should be allowed to cool completely at room temperature before being transferred to an airtight container. Stored in the refrigerator, it will maintain its quality and deliciousness for up to a week. When you’re ready to enjoy it again, simply reheat it gently in a saucepan over medium-low heat, stirring occasionally until warmed through, or use a microwave for quicker convenience. If the soup appears too thick after refrigeration, you can add a splash of vegetable broth or plant-based milk to achieve your desired consistency.

Freezing: This soup freezes beautifully, making it an excellent candidate for batch cooking. Consider doubling the recipe to ensure you have plenty of portions to freeze for those busy days when you need a quick, wholesome meal. To freeze, allow the soup to cool completely. Then, transfer it to freezer-safe airtight containers or heavy-duty freezer bags. Make sure to leave a little headspace at the top of the container, as liquids expand when frozen. It will keep well in the freezer for up to two months. When ready to serve, thaw the soup overnight in the refrigerator, then reheat as directed above. Freezing and thawing may slightly alter the texture, but a quick whisk or immersion blend when reheating will restore its creamy consistency.

A classic cream of mushroom soup reinvented as a luscious plant-based and dairy-free delight, made with creamy oat milk.

Equipment

  • Immersion blender (or standard blender/food processor)

Ingredients

  • 1 large onion, chopped
  • 1 celery stalk, diced
  • 1-2 cloves garlic, minced
  • 3-4 sprigs fresh thyme, or ¼ tsp dried thyme
  • 500g / 6 cups button mushrooms, sliced
  • 100g / 1 cup Portobello mushrooms, sliced
  • Salt to taste
  • 1 tbsp all-purpose flour
  • 1 litre / 4 cups vegetable stock
  • 125 ml / ½ cup plant-based single cream, oat cream recommended
  • Olive oil for sautéing

Instructions

  1. In a medium-sized pot or Dutch oven, heat a generous drizzle of olive oil over low heat. Add the chopped onion and diced celery, sautéing gently for 5-7 minutes until they soften and become translucent, but not browned. While these are cooking, clean your mushrooms thoroughly and slice them evenly. Once the onions and celery have softened, stir in the minced garlic and fresh or dried thyme, cooking for an additional 30 seconds until fragrant, being careful not to burn the garlic.
  2. Increase the heat slightly to medium. Add all the sliced mushrooms (both button and Portobello) to the pot along with a pinch of salt. Cook the mushrooms for about 10 minutes, stirring occasionally. During this time, the mushrooms will release a significant amount of water. Continue cooking until most of this liquid has evaporated, concentrating their flavour. Once only a small amount of liquid remains, sprinkle the flour evenly over the mushrooms and stir well to coat them thoroughly. Cook for another minute, stirring, to cook out the raw flour taste.
  3. Pour in the vegetable stock, stirring constantly to combine with the floured mushrooms and prevent lumps. Bring the soup to a gentle simmer, then reduce the heat to low, cover, and let it cook gently for 10 minutes. This allows the flavours to meld and the soup to thicken slightly.
  4. Remove the pot from the heat. For a silky-smooth soup, allow it to cool slightly before carefully transferring it in batches to a food processor or blender. Blend until completely smooth. Alternatively, and often the easiest method, use an immersion blender directly in the pot to blend the soup until it reaches your desired creamy consistency. Return the blended soup to the pot to reheat gently over low heat. Stir in the plant-based single cream (oat cream recommended) and warm through, ensuring it doesn’t boil after adding the cream. Taste the soup and adjust the seasoning with additional salt or black pepper if needed. Serve hot and enjoy!

Notes

I found that oat cream yielded excellent results in this soup, providing perfect creaminess and a neutral flavour. While I specifically tested this recipe with oat cream, other plant-based creams like soy cream or cashew cream should also work well to achieve a similar creamy texture.
