  • 500g/1lb beets, approximately 4 medium beets
  • 65g/1/2cup chopped walnuts, plus 1 tbsp for serving
  • 1 tbsp fresh parsley, chopped plus a pinch for serving
  • 1 tbsp fresh dill, chopped plus a pinch for serving
  • salt to taste
  • ½ clove garlic, pressed
  • 125ml/1/2cup mayonnaise (full-fat or low-fat)
  • 1 tbsp white wine vinegar
  • 1½ tsp Dijon mustard
  • 1 tbsp cold water to loosen the dressing
  • black pepper to taste

Instructions

  1. Trim the beet leaves and wash the beets thoroughly, but do not peel them at this stage, as beetroot tends to bleed its vibrant color when boiled. Keeping the skins on helps to minimize this. Place the beets in a pot and cover them completely with water. Bring to a boil, then reduce heat and simmer for approximately 30 minutes for small beets, or longer for larger ones. To test for doneness, pierce a beet with a knife – it should feel tender, much like a cooked potato. Once cooked, cool the beets completely before peeling and grating them. A vegetable grater or, my preferred method, a food processor with a grating disc, will make this step much easier.
  2. In a large mixing bowl, combine the freshly grated beets with the chopped walnuts and the finely chopped fresh parsley and dill.
  3. Prepare the garlic mayonnaise dressing: In a mason jar, combine the mayonnaise, pressed garlic (remember, just ½ clove!), white wine vinegar, Dijon mustard, and cold water.
