Ingredients

  • 450g / 1
    lbs
    chicken breast mini filets
  • Salt and pepper
  • 2
    tbsp
    olive oil, divided
  • 1/2
    white onion,

  • 300g / 3 cups
    chestnut mushrooms,
    sliced
  • 2
    tbsp
    flour
  • 125ml / 1/2 cup
    Marsala wine
  • 250ml / 1 cup
    chicken stock
  • 250ml / 1
    cup
    single / light cream
  • 250g / 8 oz
    fettuccine / tagliatelle
  • Flat leaf parsley
  • Grated Parmesan cheese to serve

Instructions

  • Sprinkle bite-sized chicken breast pieces with salt and pepper on both sides and fry in 1 tbsp of olive oil until golden over medium-high heat for approximately 5 minutes. Do not overcook as the chicken breasts will be quite small and will cook fast. Remove to a separate plate and set aside.
  • Set a pot of water to boil. Once boiled, add a pinch of salt and pasta. Cook according to package instructions until al dente.
  • In the same pan where you cooked chicken, heat another tablespoon of olive oil. Add the sliced mushrooms, salt, and pepper, and sauté for 5 minutes over medium heat. Push them to the side and add the chopped onions. Cook the onions over low heat for 2-3 minutes until softened. Stir in the 2 tbsp of flour and cook for a minute longer. Pour in the Marsala wine, increase the heat to medium, add chicken stock, and bring to a simmer. Reduce the heat to a gentle simmer and return the cooked chicken to the pan. Finally, stir in the cream and allow it to heat through and thicken in the sauce for a few minutes until it reaches your desired consistency.
  • Drain the pasta once cooked and add it directly to the sauce with the chicken. Toss thoroughly to coat all the pasta strands evenly. Serve immediately, garnished with fresh flat-leaf parsley and a generous grating of Parmesan cheese.
